White Chocolate Raspberry Cheesecake

Easy Cheesecake with White Chocolate and Raspberry

Ingredients
  • Cream cheese, 2 lb.
  • Vanilla, 1 tsp.
  • White chocolate, melted, 8 oz.
  • Sugar, 1 cup
  • Eggs, 4
  • Frozen raspberries, thawed, 2 cups
  • Sugar, 1 cup
  • Framboise, ½ cup
Procedure
Take a mixing bowl and combine vanilla, sugar, eggs, and melted white chocolate. Beat the mixture using an electric hand mixer to attain a smooth and soft texture. Then, take a springform pan and transfer this mixture to it. Take a large heavy saucepan and pour some water in it. Place the bowl in this water bath and bake the mixture in it for one hour at 250°F. Meanwhile, put raspberries, Framboise, and sugar in a blender and prepare a smooth paste. Strain the mixture and pour it over the baked cheesecake.
White Chocolate Cheesecake with Raspberry Sauce

Ingredients

  • Butter, melted, ¼ cup
  • Cream cheese, softened, 3 packages (8 oz.)
  • Cornstarch, 2 tsp.
  • Chocolate cookie crumbs, 1 cup
  • Eggs, 3
  • Frozen raspberries, 1 package (10 oz.)
  • Half-and-half cream, ½ cup
  • White sugar, 3 tbsp.
  • White sugar, ½ cup
  • White sugar, 2 tbsp.
  • Water, ½ cup
  • White chocolate chips, 2 cups
  • Vanilla extract, 1 tsp.
Procedure
Take a medium-sized bowl and combine sugar (3 tablespoons), melted butter, and cookie crumbs. Combine these ingredients properly, then take a springform pan and press this mixture at its bottom. In a heavy saucepan, combine sugar (2 tablespoons), water, cornstarch, and raspberries. Bring this mixture to a boil and continue boiling for 5 more minutes.
With the help of a strainer, strain the sauce and remove the raspberries seeds. Meanwhile, preheat the oven to 325°F. Then, pour some water in a saucepan and simmer it. Place white chocolate chips in a metal bowl and place this bowl over the simmering water. Stir the chocolate mixture occasionally. In another large bowl, combine cream cheese and ½ cup of sugar. Blend them until they get mixed properly. 
Then, put in beaten eggs, vanilla and the melted white chocolate. Pour half of this mixture over the crust prepared in the springform pan. Then, make a layer of raspberry sauce over it. Pour in the remaining mixture over the raspberry sauce layer and again make a layer of raspberry sauce (3 tablespoons). Place the springform pan in the preheated oven for about an hour. Then remove it from the oven, cool, and cover it with a plastic wrap, and refrigerate for about 8 hours. Pour the remaining raspberry sauce while serving.
