Vegetarian Crock Pot Recipes

Crock pot, also known as a slow cooker, is an electrical cooking appliance. It can be left unattended for many hours, as it uses very low temperatures to cook food.
A crock pot is the best way to cook vegetarian recipes. The digital timer on the appliance shuts on and off the crock pot according to the preset timer even when you are not around. Just add all the ingredients into it, cover, and let it cook. Prepare the following recipes and play wonders with the taste buds of your loved ones. These simply irresistible vegetarian recipes will surely win over the hearts of the ones.

Cheese Fondue Crock Pot Recipe

Ingredients
  • 1 can, Cheddar cheese soup
  • 1 pound, processed cheese cut in cubes
  • 16 ounces, shredded Swiss cheese
  • 1 cup, apple cider
  • 1/2 teaspoon, hot pepper sauce
  • 2 drops, liquid smoke flavoring
Method of Preparation
Add all ingredients in the slow cooker and stir well. Cover and cook on low for 2 hours. After 1 hour of cooking time, stir the ingredients. Whisk to blend the ingredients before serving. Serve with veggies for dipping or bread sticks.

Brown Rice Recipe

Ingredients
  • 1 cup, long-grain brown rice
  • 1 cup, unsweetened apple juice
  • 1 cup, water
  • 1/2 cup, raisins
  • 1/2 teaspoon, ground cinnamon
Method of Preparation
Add all the ingredients in a crock pot and stir well. Cook on low for 8-10 hours. A delicious meal is ready for your family.

Barley Vegetable Recipe

Ingredients
  • 1 cup, medium pearl barley
  • 1 bay leaf
  • 1/2 teaspoon, fennel seed
  • 8 baby carrots
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 garlic cloves, minced
  • 2 sweet potatoes (peeled and chopped)
  • 2 cups, frozen corn
  • 2 cups, frozen green beans
  • 1/4 teaspoon, salt (optional)
  • 1/4 teaspoon, pepper
  • 3 cans, vegetable broth
  • 4 cups, water
  • Diced tomatoes with herbs (undrained)
Method of Preparation
Add all the ingredients except tomatoes in a 5-6 quart crock pot. Do not stir. Cover the lid. Cook on low for 6-8 hours. Stir the soup and add tomatoes. Cover again and cook for 10-15 minutes until soup is hot. Remove the bay leaf before you serve.

Petite Marmite Rice Recipe

Ingredients
  • 1 medium onion (chopped)
  • 2 medium carrots, thinly sliced
  • 2 stalks celery (cut into 1/2 inch pieces)
  • 1 red bell pepper (seeded, cut into 1/2 inch pieces)
  • 1 medium zucchini (scrubbed, sliced into 1/2 inch rounds)
  • 2 cloves garlic (minced)
  • 2 (14 oz.) can, of vegetable broth
  • 1 (28 oz.) can, crushed tomatoes
  • 2 (15 oz.) cans, kidney beans, drained
  • 2 teaspoons, dried marjoram
  • 1/4 teaspoon, coarsely ground black pepper
  • 1 cup, cooked rice
Method of Preparation
Add all ingredients except rice to the crock pot. Cover and cook on low for 8-10 hours. If you want to cook on high, it will be done in 4-5 hours. Add cooked rice to the petite marmite and stir to combine.

Spicy Chili Recipe

Ingredients
  • 2 tablespoons, olive oil
  • 1 small green pepper (chopped)
  • 3 large cloves garlic (minced)
  • 1/2 large onion (chopped)
  • 2 pouches thawed meatless ground burger (2 cups)
  • 1 packet, chili seasoning mix
  • 1 jar, chunky salsa
  • 1 can, diced tomatoes with green chilies
  • 1/2 cup, water
  • 1 can, dark red kidney beans (drained and rinsed)
Method of Preparation
Heat the garlic in olive oil till it turns brown, and then, add onion and green pepper. Sauté for a few minutes. Add meatless ground burger and chili mix. Stir and blend well. Add salsa, tomatoes, and water. Cover and simmer for one hour in the crock pot. Add the kidney beans and simmer for 30 minutes.

Rice Pudding Recipe

Ingredients
  • 2 quarts, vanilla soy milk
  • 1 cup, uncooked rice
  • 1 cup, sugar
  • 3 tablespoons, margarine
  • Salt to taste
  • 1 teaspoon, vanilla
  • 1/2 cup, raisins
  • 1/2 teaspoon, cinnamon
Method of Preparation
Combine all the ingredients in a crock pot. Cook on high for 5-6 hours. Stir the ingredients once every hour, until the desired consistency is reached. Cooking time may vary.

Coconut Rice Recipe

Ingredients
  • 800 ml milk
  • 400 ml Coconut milk
  • 130 g Aborio rice
  • 60 g Castor sugar
Method of Preparation
Add all the ingredients in the crock pot. Blend until well-combined. Cook on low for 8 hours.
