Turkey Breast Cutlet Recipes

Making turkey breast cutlets from scratch is a great idea for Thanksgiving. In this post we are going to give you some delicious recipes of turkey breast cutlets.
Can you think of Thanksgiving without turkey in your dinner menu. Traditionally roast turkey with stuffing and gravy is served for Thanksgiving dinner as the main course. But this year you can jazz things up a little by serving turkey breast cutlets.
There are many different recipes for turkey breast cutlet and you can make any version for your dinner. While cooking turkey breast, one very important thing to keep in mind is that you should not overcook the meat. Overcooked turkey breast tastes dry and leathery and it has a very bad texture as well.
To make juicy and delicious turkey, you should follow the recipe for turkey breast cutlet accurately. Turkey breast cutlet recipes are lot simpler and less time-consuming than cooking a whole turkey.

Pan-Fried Turkey Breast Cutlet

Ingredients
  • 4 boneless turkey breasts
  • ¼ cup all-purpose flour
  • 1 tablespoon butter
  • 2 teaspoons Dijon mustard
  • 1 tablespoon vegetable oil
  • ¾ cup dried cranberries
  • 1 cup fresh orange juice
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
Method

Trim skin and any excess fat from the turkey breast. Insert the knife in the middle of the turkey breast and then cut it into half. In this way you will have 8 turkey breast cutlets.
Place turkey breast in a cling film and then wrap it securely. Take a mallet and tenderize and flatten the turkey breast evenly. Now remove cling film and sprinkle all the cutlets with salt and black pepper.
In a skillet, melt the butter and add the vegetable oil. Once the butter melts, dredge the turkey cutlets in flour and pat with your fingers to shake off the excess flour. Gently place the turkey breast cutlet into the skillet and pan-fry for about 2 minutes.
After 2 minutes, flip the cutlet to the other side and cook for another 2 minutes. When the turkey cutlets turn golden brown in color, remove from the skillet and keep them in a warm plate, allowing them to rest. Pan-fry all the other turkey cutlets in the same way.
When all the cutlets are done, add the Dijon mustard paste, orange juice and dried cranberries to the skillet. Scrape the bottom of the pan with a spoon to dissolve all the browned bits of the turkey cutlets.
Reduce heat and simmer the sauce for about 20-25 minutes. When the sauce is reduced to about half of its original quantity, spoon a bit of the sauce over the warm turkey cutlets and serve immediately.

Baked Turkey Breast Cutlets

Ingredients
  • 8 turkey breast cutlets
  • ¾ cup fresh Parmesan cheese
  • 1 cup bread crumbs
  • ¼ cup parsley leaves
  • 1 tablespoon spicy brown mustard
  • 1 teaspoon salt
  • 2 eggs
  • ½ teaspoon freshly ground pepper
  • 1 teaspoon dried thyme leaf
Method

Pound the turkey cutlet with a mallet to tenderize and flatten it. Then season them lightly with salt and black pepper and keep them aside.
In a food processor, whiz the bread crumbs, dried thyme, Parmesan cheese and parsley leaves, until you have a smooth and fine mixture. Transfer this mixture into a plate and spread it out. In another bowl whisk the 2 eggs along with the spicy brown mustard.
Now dip the turkey breast cutlet into the egg mixture and then dredge it in breadcrumbs. Grease a baking dish with a bit of butter and place the cutlets coated with breadcrumbs into it. Place the baking dish in the oven and bake turkey breast for 20 to 30 minutes at a 170° C oven temperature. Garnish with sprigs of parsley to serve.

Grilled Turkey Breast Cutlets Recipes

Ingredients
  • 2 boneless turkey breast
  • ¼ teaspoon ground cloves
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon brown sugar
  • ¾ teaspoon onion powder
  • 1 teaspoon vegetable oil
  • ¾ teaspoon garlic powder
  • ¾ teaspoon white pepper
Method

In a bowl, add the ground cloves, paprika, pepper, salt, onion powder, garlic powder, brown sugar, white pepper and oil. Mix all these ingredients well and keep aside.
Cut the turkey breast into half, through the middle and tenderize it by using a mallet. Rub the spice mixture over the turkey breast cutlet and let it marinate for about an hour. After an hour, grill turkey breast on the oven grill or barbecue for about an half an hour on medium heat.
Turn the turkey on the other side and grill for another half an hour. Serve these delicious turkey breast cutlet with creamy homemade mashed potatoes and fries.
Cooking turkey breast cutlets, whether on the grill or on the pan requires very little effort. One good tip while cooking turkey breast is that it is always better to first tenderize the meat with a mallet. This will give the turkey breast an even thickness and it will help the meat to cook evenly.
