How to Make Delicious Tuna Tartare

Tuna tartare is made by mixing finely sliced tuna with lemon juice, olive oil, and other spices and condiments. It is not very difficult to make and it is a very tasty appetizer.
Tartare is prepared by arranging very thinly sliced pieces of sea fish or raw meat with spices and sauces. Since a tartare is served raw, it should only be prepared with the best quality meat and sea fish.
A tartare made with thin slices of a fatty fish called tuna along with some other spices and condiments is called tuna tartare. The main component of a tuna tartare is lime or lemon juice or even vinegar. This acidic ingredient is very important in making a tartare as the tuna is served raw.

Basic Tuna Tartare

Ingredients
  • Sushi grade tuna, 1 lb.
  • Green chili, 1 (finely sliced)
  • Small white onion, 1 (thinly sliced)
  • Honey, 1 tsp.
  • Sesame oil, 1 tsp.
  • Soy sauce, 1 tbsp.
  • Juice of ½ a lime
  • Black pepper, ½ tsp. (freshly ground)
  • Salt, ½ tsp.
  • Sesame seeds, ½ tsp.
Method
Finely slice the tuna into thin slices and place it in a large bowl. In another bowl, place the sliced green chilies, onion, sesame oil, honey, lime juice, and soy sauce and mix all these ingredients together. Pour this mixture over the thinly sliced tuna and allow it to marinade.
To serve the tartare, place a 2 inch round chefs ring on the center of a plate and spoon in the tuna mixture inside the ring. Press down firmly with your fingers and remove the ring gently. Sprinkle the tartare with some toasted sesame seeds before serving.

Tuna Tartare with Avocado

Ingredients
  • Sushi grade tuna, 1 lb. (finely diced)
  • Olive oil, 1 tbsp.
  • Gherkins, 1 tbsp. (minced)
  • Capers, 2 tbsp. (drained)
  • Chipotle pepper, 1 (diced)
  • Fresh cilantro leaves, 2 tbsp.
  • Ripe medium avocado, 1
  • Kosher salt, 1 tsp.
  • Black pepper, ½ tsp. (freshly ground)
  • Fresh lime juice, 2 tbsp.
  • Honey, 2 tsp.
Method
First peel the avocado and cut it in half. Discard the seed and scoop out the ripe avocado flesh into a bowl. In a food processor, whisk the avocado along with a bit of salt, pepper and lime juice until you get a smooth mixture. Transfer mixture to a small bowl.
In a separate bowl, combine the tuna slices with olive oil, capers, gherkins, chipotle pepper, and cilantro. Add the avocado puree into this tuna mixture and fold in gently with a spoon. To serve, place 1 tablespoon of tartare on a plate and garnish with a fresh sprig of coriander.

Oriental Tuna Tartare

Ingredients
  • Sushi grade tuna, 1 lb.
  • Corn oil, ¼ cup
  • Wasabi paste, 2 tsp.
  • Jalapeño, 2 tsp. (minced)
  • Ginger, 2 tsp. (grated)
  • Scallion, 1 tsp. (finely chopped)
  • Juice of ½ a lemon
  • Cilantro, ¼ cup (chopped)
  • Tomato, 1 (peeled, seeded, and chopped)
  • Sesame seeds, 1 tsp. (toasted)
  • Sea salt, 1 tsp.
  • Black pepper, ½ tsp. (freshly ground)
Method
In a small bowl, combine the corn oil with grated ginger and then allow it to stand at room temperature for at least an hour. Strain the oil with a fine strainer and discard the grated ginger.
With a sharp knife, slice the tuna thinly and place it in a bowl. Add 3 tablespoons of ginger infused corn oil along with the cilantro, chopped jalapeno, wasabi paste, toasted sesame seeds, scallions, and lemon juice.
Mix all the ingredients gently and add salt and black pepper. Place a biscuit cutter at the center of a salad plate and fill the mold with tuna tartare, press the tartare gently with your fingers and lift off the mold. Drizzle some of the ginger oil around the tartare and add diced tomato on top.
Calorie content of tuna tartare is between 128 to 180, depending on the ingredients used in making it. Tuna tartare is mainly served as main course, although it is also quite popular as an appetizer.
