Traditional German Recipes

German food varies greatly from region to region. While Germany is famous for its variety of sausages, don't forget that German wine, cheese, and desserts deserve their fair share of glory too. Like any country, Germany has its own dishes and beverages that are peculiar to the region of their origin, and the true flavor can only be found in traditional German recipes. Ingredients:

• 4 potatoes (peeled, boiled, and cubed)
• 2 cups, sausage (cooked; diced)
• 4 tablespoons, gherkins (chopped)
• 4 tablespoons, onions (chopped)
• 4 tablespoons, butter
• ½ cup, mayonnaise
• Salt and freshly ground pepper to taste

Method

• In a large, heavy based pan, melt the butter. Add the chopped onions and sauté till they turn transparent.
• Add the potatoes and toss till they turn golden brown; to this, add the sausages and toss well. Take the pan off the heat, add the gherkins, and mix well.

• Put the mixture into a bowl and cool slightly till they are warm.
• Add the mayonnaise and mix, ensuring that it coats all the ingredients. Season with salt and pepper. Serve immediately.

Ingredients:

• 1 cup, butter or margarine
• 2⅓ cups, sugar
• 4 eggs
• 1 cup, milk
• 2 teaspoons, vanilla extract
• 3 cups, all-purpose flour
• 3 teaspoons, baking powder
• 1 teaspoon, salt
• 2 tablespoons, cinnamon (ground)

Method:

• Preheat the oven to 350 °F. Grease and flour a 10-inch tube pan.
• In a large mixing bowl, cream the butter and 2 cups sugar until they turn light and fluffy. Add the eggs and beat the mixture again.

• In another bowl, mix together the milk and vanilla. Sift the flour, baking powder, and salt together, and add it to the egg-butter-sugar mixture. Pour the milk and blend all the ingredients well.

• Combine the remaining sugar with the cinnamon powder. Sprinkle 2 tablespoons of the sugar-cinnamon mixture onto the greased baking pan.

• Pour ⅓ of the batter into the pan. Then, top it with half the cinnamon sugar mixture. Top with another one-third of the batter and again the sugar mixture. Finally, pour the remaining third of the batter. Smooth the top, adding any scrapings to the sides, not the middle.

• Bake in the center of the oven for 1 hour, or until an inserted toothpick comes out clean. Remove from the oven, cool on a wire rack. Serve with fresh cream.

Ingredients

• 4 eggs (separate)
• ½ cup, milk
• ½ cup, white sugar
• 1 cup, all-purpose flour
• ⅓ cup, raisins
• 1 tablespoon, butter
• 2 tablespoons, icing sugar
• 2 cups, applesauce

Method

• Beat the egg whites in a bowl until they form soft peaks. The tips should flop over when you lift your whisk.
• In a separate bowl, beat the yolks until smooth, add the milk, sugar, salt, flour, and raisins to it. Gently fold in the egg whites.

• Melt the butter in a skillet. Pour the batter into the skillet and cook till golden brown. Then flip and cook on the other side until set.
• Tear into uneven pieces with a fork, and continue cooking for a further 2 minutes.
• Serve warm, sprinkled with icing sugar and apple sauce.
