Taco Salad Recipes

Enchiladas, tortillas, nachos, tacos, etc. are popular in America, Europe, as well as South East Asia. Tacos can be used for preparing healthy and delectable salads. Some simple recipes are enlisted here.

Basic Recipe

Ingredients
  • Chili Beans, 2 cans of 16 oz. each (undrained)
  • Corn Chips, 1 packet of 10 oz.
  • Cheddar Cheese, 2 cups (grated)
  • Lettuce, 4 cups (chopped)
  • Tomatoes, 2 (chopped)
  • Onion, 1 (chopped)
  • Olives, 1 can of 2½ oz. (ripe and sliced)
  • Salsa, 1¼ cup
  • Sour Cream, ½ cup
Preparation
  • Heat the chili beans in a skillet.
  • Take a large platter and place the corn chips on it. Top it up with beans, cheese, onion, olives, salsa, sour cream, lettuce, and tomatoes.

With Chicken

Ingredients
  • Chicken, 1 can of 10 oz. (canned)
  • Salsa, ½ cup
  • Catalina Dressing, ⅓ cup
  • Tortilla Chips, 3 cups
  • Kidney Beans, 1 can of 15 oz. (drained and rinsed)
  • Green Pepper, ½ cup (chopped)
  • Tomato, ½ cup (chopped)
  • Guacamole, as a dip (prepared or canned)
  • Cheddar Cheese, 4 oz. (grated)
  • Lettuce Leaves, 1 bunch
Preparation
  • In a mixing bowl, add the chicken shreds, salsa, and Catalina dressing.
  • Take salad plates and line them with lettuce leaves.
  • Arrange chips, kidney beans, chicken (dressing mixture), green pepper, and guacamole on each.
  • Garnish with cheese.

Low-Fat Salad

Ingredients
  • Chicken or Turkey, 1 lb. (ground)
  • Bulgur Wheat, 1 cup (cooked and cooled)
  • Lettuce, 1 head (shredded)
  • Yellow Onion, 1 (diced)
  • Garlic, 2 cloves (minced)
  • Low-fat Refried Beans, 1 can of 16 oz.
  • Black Beans, 1 small can (drained)
  • Tomato, 1 large (chopped)
  • Low-fat Cheddar Cheese, 1 cup (grated)
  • Salsa, as per taste.
  • Baked Corn Tortilla Chips
Preparation
  • Boil the chicken or turkey in water, drain and keep aside.
  • In a skillet or pan, sauté the onions and garlic with non-stick cooking oil spray (or olive oil). Add the chicken and bulgur wheat. Mix well. Add the seasoning and water. Allow it to cook till the mixture becomes thick.
  • In another bowl, heat the refried beans.
  • Now take a flat-bottomed dish and layer it with meat, beans, lettuce, tomatoes, beans, and cheese.
  • Chill it in the fridge for 2 hours.
  • Serve with chips or in taco shells.

With Beef

Ingredients
  • Beef, 2 lbs. (ground)
  • Taco Seasoning Mix, 2 packets
  • Cheddar Cheese, 16 oz. (shredded)
  • Red Onion, 1 (chopped)
  • Yellow Onion, 1 (chopped)
  • Iceberg Lettuce, 2 heads (chopped)
  • Tomatoes, 4 (chopped)
  • Avocados, 2 (chopped)
  • Green Pepper, 2 (chopped)
  • Black Olives, 1 can (chopped)
  • Doritos Nacho Chips, 1 large bag (crumbled)
  • Catalina Salad Dressing, 1 bottle of 8 oz.
Preparation
  • In a skillet, sauté the ground beef and yellow onion. Add the taco seasoning and water. Let it cool.
  • In a large bowl add the lettuce, tomatoes, peppers, avocados, olives, taco seasoning, and cheese. Mix well and then add the beef mixture.
  • Add the dressing and crumbled Doritos, just before serving.
  • Garnish with some extra cheese and olives.
