Stuffed Bell Peppers

Rice or meat-stuffed bell peppers is one of the favorite dishes of people of all age groups. Presented here are some easy recipes for the same.
We all love the deliciously stuffed green or red peppers. A dish of peppers with tasty filling of beef, turkey, or vegetables, topped with cheese and dipped in sauce is simply incomparable. You must have tried the basic bell pepper recipe with beef. In that case, try the other alternatives given here.

Stuffed with Rice

If you are a vegetarian, try this recipe. We have used rice and tofu for stuffing here.

Ingredients
  • 4 bell peppers
  • 1 cup of uncooked brown rice
  • 12 ounce diced firm tofu
  • 1 and 3/4 cups of marinara sauce
  • 2 cups of shredded mozzarella cheese
  • 8 slices of tomato
  • 1 minced clove of garlic
  • 2 cups of water
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
Method of Preparation
  • Bring the rice to boil in a pot and let it simmer for 40-45 minutes.
  • The oven should be preheated to 350 degrees F.
  • Now in a pan, heat olive oil, stir and cook tofu and garlic in it for 5 minutes. Add marinara sauce, salt, and pepper and stir until the tofu turns brown.
  • Take bell peppers, remove the top, seed, and clean them from inside.
  • Stuff with a layer of cooked rice, tofu mixture, slice of tomato, marinara sauce, and cheese. Repeat the layers if possible. Top with cheese.
  • Place the peppers in a baking dish and bake for 25 minutes. When the cheese melts, your peppers are ready!

Stuffed with Ground Turkey

Ingredients
  • 2 green/red bell peppers
  • 8 oz of ground turkey breast
  • 1 cup white rice
  • ½ cup of diced tomatoes
  • 1 cup of tomato sauce
  • ½ cup of Monterey Jack cheese
  • ½ tablespoon of pure olive oil
  • 2 teaspoons of minced garlic
  • 75 g of onion
  • ½ tablespoon of dill seed
  • 1 teaspoon of ground cumin
  • 1/4 teaspoon cayenne pepper
Method of Preparation
  • Cook rice according to the instructions on the pack.
  • Now in a pan, heat olive oil, and stir garlic, onion, spices, and ground turkey. Cook the turkey until brown.
  • Next, add rice, tomatoes, and half the tomato sauce to the turkey mixture.
  • Cut the top of peppers, remove seeds, and clean.
  • Stuff the turkey and rice mixture inside the bell peppers. Top with tomato sauce and cheese.
  • Pour the remaining sauce in the baking dish. Bake the peppers for 50 minutes at 375 degrees F.
  • Your dish is ready when the cheese melts.

Stuffed Bell Pepper Soup

Ingredients
  • 2 cans condensed tomato soup
  • 1 cup red/green diced bell peppers
  • 1 cup white rice
  • 2 cloves minced garlic
  • ½ cup diced onion
  • 1 teaspoon of basil
  • Grated cheese for topping
Method of Preparation
  • Cook the rice according to the instructions.
  • In a pot, add 2 cans of soup and 2 cans of water. Also add diced peppers, onions, basil, and garlic into it.
  • Add rice to the pot. Now heat this on medium to high heat.
  • Bring the soup and rice to boil and simmer for 7-8 minutes.
  • When the vegetables are fully cooked, the recipe is ready. Top with grated cheese and serve!
