Squash Casserole Recipes

A casserole is one of the best dishes that can be prepared with squash. Here are some recipes to prepare the dish.
A squash casserole is a nutritious dish that can be prepared easily. As the name suggests, the main ingredient is squash, which has to be fresh. Some people use canned squash to prepare the dish, but fresh ones are always preferred for making casseroles.
Apart from squash, you may use cheese, eggs, pecans, peppers, and other ingredients of your choice. As there are different types of squash that vary in flavor, make sure to use the specific type, that is mentioned in the recipe.

Recipe I

Ingredient

  • Yellow squash (slices) - 3 cups
  • Onion (medium-sized) - 1
  • Stuffing mix - ½ pack
  • Sour cream - 1 cup
  • Butter - 1 stick
  • Cream of chicken soup - 1 can
  • Pimiento - 1 jar (2 oz)
  • Salt and pepper - As per taste
Cook the squash slices, along with chopped onion. Drain them and keep aside. Melt the butter in a bowl, and add the stuffing mix into it. Mix them well, and remove half of this stuffing mix. Keep it aside. Add the other ingredients, like sour cream, chicken soup, salt, pepper, pimiento, and cooked squash, into the bowl.
Combine them well. Take a casserole dish and put the prepared mixture into it. Top the mixture with the remaining stuffing, that is kept aside. Bake for around 30 to 40 minutes at 350°F.

Recipe II

Ingredients

  • Yellow squash (sliced) - 4 cups
  • Crushed butter crackers (like Ritz) - 1 cup
  • Shredded cheddar cheese - 1 cup
  • Onion (chopped) - ½ cup
  • Eggs - 2
  • Melted butter - ¼ cup
  • Milk - ¾ cup
  • Butter - 2 tbsp.
  • Salt and pepper - as per taste
Cook the squash slices and chopped onion in water. Remove from heat, when the squash pieces get tender. Drain them and keep aside. Mix the crushed butter crackers with cheese, and keep aside half of the mixture. Add the remaining half of this mixture to the cooked squash pieces and mix well.
Whisk the eggs and milk in a small bowl, and add to the squash mixture. The next step is to add the melted butter along with the required amount of salt and pepper. Combine them well, before pouring the mixture on a greased casserole dish. Top it with the remaining cheese cracker mixture that is kept aside.
Bake for around 25 to 30 minutes in the oven, that is preheated to 400°F, or till the dish turns golden brown. This squash casserole with cheese and Ritz crackers can be prepared without much efforts.

Recipe III

Ingredients

  • Butternut squash slices - 3 cups
  • Cnned crushed pineapple with juice - 8 ounce can
  • Melted butter - ¼ cup
  • Chopped walnuts or pecans - ⅓ cup
  • Vanilla extract - 1 tbsp.
  • Ground cinnamon - 1 tbsp.
  • Ground nutmeg - a pinch
Cook, drain, and mash three cups of butternut squash slices. Add ¼ cup of melted butter, canned crushed pineapple, vanilla extract, ground cinnamon, and one or two pinches of ground nutmeg to the mashed butternut squash. Combine them well.
Once done, transfer the mixture to a buttered casserole dish. Top it with ⅓ cup of chopped walnuts or pecans. Bake the dish for around 45 minutes in the oven, that is preheated to 325°F. Your casserole is ready to be served.
