How to Make Sponge Candy

Although sponge candy is easily available in the market, many people are looking for ways on how to make this at home. If you are also one of them, then look no further, as this story contains a detailed recipe for this delightful treat.
People who love to snack on sugary foods are in for a treat because it is not very difficult to make sponge candy at home. These are also known as sponge toffees and are quite popular worldwide. However, each country has a different name for these.
While they are called honeycomb toffees in Britain, its hokey pokey in New Zealand. They are also known as cinder toffee, puffy candy, yellow man, angel food candy, etc.
Sponge candy is hard on the outside but soft on the inside, which gives it a flavor similar to molasses. So, if you are interested in preparing this at home, here is the recipe.

Preparing Sponge Candy

Firstly, the most important thing that you require, is an accurate candy thermometer. This is because without the thermometer, you will not know the temperature of the mixture. This can lead to overcooking.
Ingredients
  • 2½ cups, granulated sugar
  • 2 tablespoons, baking soda
  • ⅔ cup, light corn syrup
  • 2 teaspoons, vanilla extract
  • ½ cup, water
  • 2 tablespoons, vegetable oil

Step #01

Grease a 10 inch, round baking pan's entire surface with the vegetable oil. Now, place parchment paper on the bottom, as well as on the sides of the pan. Make sure that the parchment paper extends the brim of the pan by 2-3 inches. Then, coat the parchment paper with vegetable oil, too.

Take a medium-sized, shallow saucepan and pour water into it. Now, add the sugar, vanilla extract, and corn syrup, into it. Place the saucepan on the stove and cook it on medium to high heat. Without stirring, allow it to boil for 10 minutes. As the mixture starts to boil, take its temperature with the help of the thermometer. When it reads 300 °F, take the pan off the heat.

After you set the pan down, immediately add baking soda to it. On doing this, the liquid will begin to bubble. Do not touch it while it bubbles. Stir the mix for 5-10 seconds after the baking soda is added.
Pour the contents into the greased baking pan. Make sure that you wear oven gloves while doing this. Allow the baking pan to cool and set at room temperature. When reaches room temperature, slice the sponge candy into small pieces and serve. Your candies are now ready.

Additional Tips

They can be stored in airtight containers for later use, too. Dipping the candies in chocolate sauce gives them a delicious flavor. To make the chocolate dip, you just have to melt your favorite chocolate chips in the microwave or on the stove.
When it melts, dip the prepared treats into it and coat it, generously. Place each piece separately on parchment paper and allow it to set. You can also have these with dollops of ice cream and garnished with grated chocolates.
