Ingredients
  • Fresh spinach leaves, well shredded - 2 cups
  • Mayonnaise - ½ cup
  • Cheddar cheese, well shredded - ½ cup
  • White vinegar - 1 teaspoonful
  • Hard-boiled egg, chopped - 1
  • Fresh celery, finely chopped - ¼th cup
  • Finely chopped onion - ¼th cup
  • Salt - as per taste
  • Black pepper powder - as per taste
  • Hot pepper sauce (optional) - ½ teaspoon
Method of Preparation
  • Mix the mayonnaise, salt, pepper, vinegar, celery, onions and chopped eggs together and refrigerate for at least 4-6 hours before serving.
  • Combine the spinach and shredded cheese in a salad bowl and add the aforementioned refrigerated salad dressing.
  • Toss and serve.

Spinach and Bacon Salad

Ingredients
  • Fresh spinach leaves, well shredded - 2 cups
  • Cooked and crumbled bacon slices - 4-6
  • Hardboiled eggs, chopped - 2
  • Olive oil - ½ cup
  • Wine vinegar - ¼th cup
  • Soy sauce - 1 tablespoonful
  • White wine - 1 tablespoonful
  • Dry mustard - ½ teaspoon
  • Garlic powder - ½ teaspoon
  • Sugar - 3/4th teaspoon
  • Salt - as per taste
  • Black pepper powder - as per taste
  • Onions, finely chopped - 1/4th cup
  • Curry powder - ½ teaspoon
Method of Preparation
  • Prepare the dressing by mixing the white wine, olive oil, vinegar, sugar, soy sauce, dry mustard, curry powder, salt, pepper and garlic powder together in a mixing bowl.
  • Add the spinach to a salad bowl and toss in the chopped onions.
  • Pour the dressing over the spinach and onion mixture and top it up with eggs and bacon by spreading them evenly over the dressing layer.
  • Serve fresh.

Spinach and Chicken Salad

Ingredients
  • Fresh spinach leaves, finely chopped - 2 cups
  • Boneless chicken breast halves, cooked and skinned - 4
  • Fresh red bell pepper, finely chopped - ½ cup
  • Finely chopped zucchini - 1 cup
  • Black olives - ½ cup
  • Cesar salad dressing - ½ cup
  • Shredded cheddar cheese (optional) - ½ cup
Method of Preparation
  • Take a salad bowl or plate and layer the base with spinach.
  • Mix the chicken breasts, zucchini, black olives and bell pepper together and arrange it as a sheet over the spinach layer.
  • Sprinkle the shredded cheese over the chicken and zucchini layer and top it with Caesar salad dressing, spreading it evenly as the topmost layer.
  • Sprinkle fresh coriander leaves over the dressing layer if you wish.
  • Serve fresh.
