Smothered Pork Chops Recipes

This is a dish that can be prepared easily with fried pork chops and a simple onion gravy. Here are some recipes for making it at home.
Smothered pork chops is a flavorful dish that can be prepared very easily. It is a classical preparation that belongs to the southern cuisine, and is a perfect combination with rice, mashed potatoes, etc.
As the name rightly suggests, this dish has browned pork chops smothered with a scrumptious gravy that can be prepared with many different ingredients. You may either go for a simple onion gravy, or those elaborate ones with ingredients, like cream, vegetables, or mushrooms.

Recipe I

Ingredients
  • Large pork chops (1 to 1.5 inches thick) - 4
  • Chicken broth - 1½ cups
  • Buttermilk - ¼ cup
  • Butter - 1 tbsp.
  • Vegetable oil - 2 tbsp.
  • Garlic cloves (minced) - 4
  • Poultry seasoning - 1 tsp.
  • Yellow onion - 1 (large)
  • Flour - 1 tbsp.
  • Water - ¼ cup
  • Salt and ground pepper - as per taste
Preparation Method
Rinse and clean the pork chops. Coat them well with salt, pepper, and poultry seasoning. Heat oil in a skillet. As the oil gets hot, brown the chops, so that each side is cooked for around five minutes. Once done, keep the pork chops aside, and add butter to the skillet.
Keep the skillet over medium heat, and as the butter starts melting, add sliced onion. Saute onion slices till they get browned. It will be better to add a pinch of salt, so as to fasten the process. As onion starts caramelizing, add minced garlic, and cook for another two minutes.
Mix the flour, and cook for two to three minutes, before adding the chicken broth, buttermilk, and water. Allow the mixture to boil over low heat for at least 15 minutes.
If the gravy gets too thick, add a small amount of water and boil again, before adding the browned pork chops. Cover and cook for 10 to 15 minutes, till the chops are done. Your smothered pork chops is ready to serve.

Recipe II

Ingredients
  • Pork chops - 8
  • Sour cream - 1 cup
  • White flour - 1 cup
  • Medium-sized onion - 1
  • Garlic clove - 1 (minced)
  • White vinegar - 4 tbsp.
  • White sugar - 2 tbsp.
  • Bay leaves - 2
  • Chopped parsley - 1 tbsp.
  • Oil - 2 tbsp.
  • Salt and ground pepper - as per your taste
  • Water - 1 cup
How to Prepare
Rinse and clean pork chops (better to buy tenderloin or rib chops). Once the water is drained from the chops, sprinkle salt and ground pepper. It will be better to use garlic salt. Dip the chops in flour, and fry them till they get browned. Make sure that each side is cooked for around four minutes.
Once done, remove the chops from oil, and keep aside. Saute chopped onion, minced garlic, and crushed bay leaves in the oil left in the pan. As the onions turn brown, add water and sugar. Wait till the sugar dissolves completely, before adding vinegar, sour cream, and parsley.
When the sauce starts boiling, remove the pan from heat. Pour the sauce over the browned pork chops, which is placed in a casserole dish. Cover the dish, and bake the chops for around 1½ hours in an oven that is preheated to 350° F.

Recipe III

Ingredients
  • Pork chops (lean) - 4
  • Mushrooms (fresh) - 8 ounces
  • Cream of mushroom soup - 1 can
  • Milk - 1 cup
  • Onion (large) - 1
  • Garlic cloves (minced) - 2
  • Chopped green pepper - 1 tbsp.
  • Chopped parsley - for garnishing
  • Olive oil - 2 tbsp.
  • Salt and ground black pepper - as per taste
Preparation Method
Rinse and clean the pork chops, after removing chunks of fat (if any). Drain them well, before applying salt and ground pepper. Take a skillet and heat oil in it. Fry the chops till both sides turn light brown. It will take around four to five minutes, for each side to get done, over medium heat.
Once done, remove the chops from the skillet, and keep aside. Add chopped onion and green pepper to the oil left in the skillet. As the onion gets soft, add sliced mushrooms, and cook for another two minutes.
Add ⅓ cup milk to the skillet, followed by mushroom soup. Stir the mixture, till it gets heated. Add the browned pork chops to this sauce, and cook them for another 15 minutes, over low heat. Garnish with parsley and serve.
