Flour is a multipurpose food ingredient, which is used almost daily by all of us in many a recipes. We do know that there are different variety of flours available in the market today, and each one has some or the other nutritional benefit associated with it.
However, here, we are going to talk about the semolina flour which is characterized by yellow color, high gluten content and manufactured by processing durum wheat (precisely the endosperm). How many of you have had pasta or pizza? Well, surely all! You may not be aware, but what goes in their making is the semolina flour. Yes, you heard it right! So let us see some recipes which you could try out at home.

Pasta Dough

Ingredients
  • 1 cup all-purpose flour
  • 1 cup semolina flour
  • 1 pinch salt
  • 3 large eggs
  • 1 tablespoon olive oil
Procedure

For making pasta dough, take a large bowl into which add all-purpose flour and the semolina flour. Next, add salt and mix the 2 flours well. Now, add olive oil and eggs and with the help of a stand mixer, mix all the ingredients nicely so that a dough is formed which is not too dry and not too sticky either.
Make use of extra semolina flour and water to adjust the proper moisture levels in the dough. Knead it well. After your dough is ready, place it in a plastic bag and keep it undisturbed for about half an hour. Run the dough through a pasta maker. Lastly, place pasta on a drying sheet and let it dry for about 10 minutes. Use it for the recipe of your choice.

Pizza Dough

Ingredients
  • 1 teaspoon honey
  • 2 tablespoons dry yeast
  • 2½ teaspoon salt
  • 2 cups semolina flour
  • 3 cups all-purpose flour
  • 2 cups warm water
Procedure

The procedure of making pizza dough is pretty easy. First of all, you need to mix honey with warm water in a large wide bowl. Add dry yeast and salt and let the mixture stay still for around 5 minutes so that it becomes foamy. Next, add both the flours gradually so that a soft dough is created.
Here, you would have to knead the dough as much as possible so that it becomes elastic. Then, keep the dough in an oil-greased bowl for about 2 hours by covering it with plastic paper. This is for it to rise up to double its size. There you are; done! You can use it as pizza base or keep it in the freezer for further use.
Semolina flour is easily available in the supermarkets all over. And in case, you are not able to find it, then there are other substitutes to your rescue like Kamut flour, spelt flour, all-purpose flour, rice flour, Amaranth flour, quinoa flour and garbanzo flour. They are among the self rising flour substitutes.
