Amazing Fish Recipes

Fish is quick and easy to cook. This story lists takes you through recipes for Armenian baked fish, baked ciscoes, pickled bluegills, and fish loaf.
A lot of these recipes have been passed on from generations. They're easy to prepare and quite delicious.

Armenian Baked Fish

Ingredients:
  • 3 lbs of white fish
  • 1 can tomatoes or 3 fresh tomatoes
  • 1 garlic clove (mashed)
  • 1 tablespoon flour
  • 1 cup water
  • 4 tablespoons parsley (minced)
  • ½ cup olive oil
  • Juice of 1 large lemon
  • 1 teaspoon salt
  • ½ teaspoon pepper
Directions:
Start by filleting and rinsing the fish. Spread the fillets with the skin side down in a buttered baking pan. Cover the fish with the garlic and tomatoes. Mix the flour with the water and add this to the fillets. Sprinkle parsley over it.
Bake at 325 ºF for about 40 minutes, depending on how thick the fillets are. Keep spooning the pan juices over the fish every now and then while it is baking. This dish can be served either hot or cold, and should be garnished with sliced lemons.

Baked Ciscoes

Ingredients:
  • 10 filleted ciscoes
  • 1½ tablespoons lemon juice
  • 2 cups thick cream
  • 1 cup light cream
  • 1½ teaspoons flour
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Buttered toast
Directions:
Quarter the cisco fillets. Places the pieces in a buttered flat baking dish. Sprinkle with some of the lemon juice. Heat the butter and flour in a saucepan. Add the thick and light cream to it slowly. Bring to a boil while stirring constantly.
Pour this sauce over the fish and sprinkle some salt and pepper on top. Bake this dish at 325 ºF for about an hour. Serve the fish and the sauce with buttered toast.

Pickled Bluegills

Ingredients:
  • 5 cups bluegills
  • 2 cups white vinegar
  • 1½ cups sugar
  • 1 teaspoon mustard seeds
  • 1 teaspoon black pepper
  • 1 teaspoon allspice
  • 1 teaspoon whole cloves
  • 4 bay leaves
Directions:
It is recommended that you use a stainless steel pan for this. Cut the fish into small chunks. Soak these pieces in a quart of water and a cup of salt water for about 2 days. Drain and rinse the fish in cold water.
Next, pour the white vinegar over the fish and then put it in the fridge for 2 more days. Drain away the vinegar. Cook all the other ingredients for about 5 minutes, and leave to cool down. Pour this over the fish, and add the onion and lemon slices on top.
Place it in the refrigerator for 5 days and then remove the spices and pack it in jars. This makes 3 pints of pickle.

Fish Loaf

Ingredients:
  • 1 onion (diced)
  • 1 cup bread cubes (toasted)
  • 2 stalks celery (diced)
  • 1 teaspoon salt
  • 1 egg (beaten)
  • ½ cup tomato sauce
  • 1 cup cheddar cheese (grated)
  • Paprika
  • Cooked and flaked fish
Directions:
Mix all the ingredients, except the paprika and the cheese, in a large mixing bowl. Work in the flaked fish until you get a smooth texture. Spoon this mixture into a bread pan and shape it to look like a loaf. Spread the cheese over this loaf, and then sprinkle the paprika on top. Bake the loaf for an hour and let it cool for about 10 minutes before you cut it. Add hot pepper sauce or chili peppers if desired.
