Sandwich Recipes for Picnics

Nothing beats a sandwich when it comes to packing a quick picnic meal. Here are some recipes that you can try in your leisure.
A sandwich is one of the most popular snack that is consumed by everyone. It is a combination of bread, meat, vegetables, and sauces that make it wholesome and filling. Preparing a sandwich for a picnic lunch is easy. Let us look at some recipes that you can prepare at home.

Chicken Salad Sandwiches with Smoked Almonds

Ingredients:
  • 6 slices, brown bread
  • 1 cup, cooked chicken (shredded)
  • 2 tablespoons, green onion (minced)
  • ¼ teaspoon, fresh basil leaves (minced)
  • 2 tablespoons, mayonnaise
  • ¼ cup, smoked almonds (finely chopped)
  • 6 lettuce leaves
  • Freshly ground pepper and salt, to taste
Mix the chicken, green onions, chopped herbs, mayonnaise, smoked almonds, salt, and pepper in a large bowl. Place a lettuce leaf on three slices of brown bread, spread the mixture evenly on them, and top it again with lettuce and another slice of bread. Cut the sandwich diagonally, and wrap in an aluminum foil.

French Stuffed Sandwich

Ingredients:
  • 1 round loaf French bread
  • 3 ripe tomatoes (sliced)
  • 3 ounces, salami (thinly sliced)
  • ½ lb turkey breast (thinly sliced)
  • ¼ lb, fresh mozzarella cheese slices
  • 1 purple onion (thinly sliced)
  • 1 (2½ ounce) can, sliced black olives
  • 1 (6½ ounce) jar, marinated artichoke hearts (liquid reserved)
  • ½ cup, mayonnaise
Cut the bread horizontally into halves, and make a hollow in the middle by scraping out some crumbs. The loaf should look like an empty shell. Pour the artichoke liquid with mayonnaise into a bowl and stir. Spread the mixture onto the bread's insides. Start layering the rest of the ingredients, and place the bread on top of the layers. Wrap the entire loaf tightly with plastic wrap, and refrigerate for 2-3 hours before serving.

Baked Turkey Sandwiches

Ingredients:
  • 25 lbs, raw turkey
  • 3 lbs dry breadcrumbs
  • 3 lbs chopped onions
  • 2 lbs tomatoes (sliced)
  • 2 lbs green peppers (thinly sliced)
  • 3 lbs mozzarella cheese
  • 3½ oz. parsley (chopped)
  • 8½ oz. Worcestershire sauce
  • 1¼ oz. garlic powder
  • ½ oz. white pepper
  • ¾ oz. dry mustard
  • 1¼ oz. salt
  • 9 lbs sandwich buns (sliced)
Mix the turkey, crumbs, onions, parsley, salt, garlic powder, pepper, Worcestershire sauce, and mustard in a bowl. Shape the mixture into ½-inch thick patties, and place it on baking sheets. Bake at 325 ºF for 15-20 minutes. Place a slice of mozzarella cheese on top of each patty and let it melt. Place the melted patties in the sandwich bun slit, garnish with slice of green pepper and tomato, and serve.

Ham and Beef Sandwiches

Ingredients:
  • 1 lbs roast beef (thinly sliced)
  • 1 pound, cooked ham (thinly sliced)
  • 12 dill pickle slices
  • ¾ cup, green onions (sliced)
  • 1 tablespoon, Worcestershire sauce
  • Shredded cheddar cheese
  • 8 oz. cream cheese (softened)
  • ¼ cup, mayonnaise
  • Unsliced Italian bread, 2 loaves of one pound each
Cut the bread in half lengthwise, and scrape the insides to create a hollow. In a large bowl, mix the cheddar and soft cream cheese, onions, mayonnaise and Worcestershire sauce, and spread it evenly on the hollows.
Then, layer it with slices of ham and roast beef, top it with pickles, and gently press the halves together. Wrap in a plastic wrap, and refrigerate for at least two hours before serving.
