Easy Red Velvet Cheesecake

Ingredients

  • Large eggs, 4 (lightly beaten)
  • Chocolate graham cracker, 1½ cup
  • Cream cheese, 3 cups (softened)
  • Sour cream, 1 cup
  • Butter, ¼ cup (softened)
  • Butter, ¼ cup (melted)
  • Granulated sugar, 1½ cup
  • Whole buttermilk, ½ cup
  • Red food coloring, 2 bottles
  • Cocoa, 3 tbsp. (unsweetened)
  • Vanilla extract, 2 tsp.
  • Powdered sugar, 2 cups
  • White vinegar, 1 tsp.

Method

Crumble the chocolate graham cracker. Once that is done, place the crumbled graham cracker in a large bowl and pour the ¼ cup melted butter over it. Also add in a tablespoon of granulated sugar and stir the mixture together. Line this mixture over a 9 inch springfoam pan, making sure that you have an even layer.
In an electric mixer, beat 2 cups of cream cheese with 1 ½ cups of granulated sugar for about a minute at medium speed. Once the sugar and cheese mixture has softened and combined thoroughly, add the lightly beaten eggs along with cocoa, buttermilk, sour cream, vanilla extract, red food coloring, and white vinegar. When all the ingredients are fully incorporated in the mixture and you have a thick batter, pour this cake batter over the graham cracker layer.
Bake the cheesecake at 325°C for 10 minutes and then reduce the heat to 300°C. Bake it for an hour and check if the center is set and firm. Keep the cheesecake inside the oven for another half an hour. After half an hour, transfer cheesecake to a wire rack to cool. When cheesecake is cool, place it inside the refrigerator to chill for 6 to 8 hours.
To make the cream cheese frosting beat 1 cup of cream cheese with ¼ cup of softened butter in an electric mixer until you have a smooth mixture. Add the powdered sugar gradually in this mixture along with vanilla extract. When you get a smooth and even mixture, spread it over the red velvet cheesecake with a wide spatula.
