Raspberry Sauce for Cheesecake

Raspberries need a lot of sun and water to grow and summer is the best time to obtain this fresh fruit. Though they are cultivated in summer, they are available all year round, thanks to our cultivars and technology! However, it is best to make the maximum use of raspberries in summers, as they are fresh and taste great during this season.
The easiest and most common recipe made with raspberry fruit is its sauce. There are many variations in the color of this fruit; the most common ones are black and red. The taste of these raspberries tend to differ with their color. Likewise, the color, taste, and texture of the sauce will change according to the type of raspberries used for making it.
Making raspberry sauce is very easy. It is also a safe option for people who are watching their weight, as raspberries are low in calories. Opting for fresh ones for your recipe would be of more benefit. This sauce which serves as a great topping for desserts like ice-creams, mousse, or cakes, can be made using frozen, canned, or fresh raspberries.

With Fresh Raspberries

Ingredients
  • 2 cups or ⅓ kg raspberries
  • ¼ cup sugar (powdered)
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 cup cold water
Method
Gently wash the fresh raspberries, take them in a saucepan, and crush them. Add the lemon juice and sugar to the pan, and mix well. In a small bowl, whisk the cornstarch into the cold water. Combine this mixture with the raspberries. Place the saucepan over medium heat, and keep stirring while bringing the mixture to a boil. If you are serving the sauce with cold desserts, refrigerate it before serving.

With Black Raspberries

Ingredients
  • 2 cups fresh black raspberries
  • 1 cup cold water
  • 1 cup pure cane sugar
Method
Before starting, thoroughly rinse the black raspberries and drain out the water. Add the raspberries along with 1 cup of cold water to the blender, and crush them till they turn into a sauce. Hold a metal strainer on top of a bowl, pour the sauce into the strainer, and stir it with a spoon to get a fine texture. You can again use a blender or the same bowl to mix some sugar into the raspberry sauce. Cover the mixture and refrigerate it for an hour before serving.
This sauce acts as an excellent condiment for cheesecakes like strawberry baked cheesecake, white chocolate raspberry cheesecake, plain cheesecake, and many more. It is convenient and safe to make homemade fruit sauces.
