Raspberry Bellini Recipe

How about incorporating some raspberries in your favorite Bellini? Here are some Bellini recipes with raspberry as an ingredient.
Bellini is a popular cocktail that was originally made of fresh peaches. This long drink cocktail originated in the Italian city of Venice. Being a long drink, this cocktail contains alcohol (especially, sparkling wines), which is served in large volumes. Earlier, it was made of fresh peach puree and the Italian wine called Prosecco.
Invented by Giuseppe Cipriani (founder of Harry's bar in Venice), the cocktail was named after the famous painter Giovanni Bellini. It is said that the pink color used in one of the paintings inspired Cipriani. As the drink too had a similar color, he named it after the great painter. Later, different versions of Bellini were introduced.
Originally, Bellini was prepared with white peach puree and Prosecco wine. You may either prepare peach puree at home, or else, go for store-bought ones. You may also replace peach puree with peach-flavored liqueurs, like peach schnapps or vodka.
However, this will increase the alcohol content of this cocktail considerably. This story will provide you with some raspberry Bellini recipes.
Frozen Raspberry Bellini
Ingredients
  • Frozen raspberries - 10 ounces
  • Prosecco sparkling wine - 1 bottle
  • Sugar - ΒΌ cup
  • Fresh lemon juice - 1 tbsp.
  • Water - 3 to 4 tbsp.
How to Prepare
Thaw the frozen raspberries, before placing them in a saucepan. Add sugar and water, and place the pan over medium heat. As the water boils, simmer the heat, and cook for around two minutes. Once done, remove the pan from heat, and allow the mixture to cool. The next step is to blend these raspberries, along with lemon juice, in a blender.
As the ingredients transform to a smooth puree, strain it, so as to remove seeds. For making raspberry Bellini, you have to add three tablespoons of raspberry puree in a glass, and fill the glass with Prosecco sparkling wine. You can garnish the drink with a pair of fresh raspberries.
Easy Recipe: Thaw the frozen raspberries and blend them with sugar, in a blender. Strain the puree and remove the seeds. Before serving the drink, you may either chill the glasses in the refrigerator or fill them with ice cubes that can be discarded. Add a tablespoon of raspberry puree in each glass, and top it with five ounces each of dry champagne. Your raspberry Bellini is ready to serve.
Raspberry Bellini With Peach
As per the original version of Bellini recipe, a small amount of cherry or raspberry puree was also added to the white peach puree. This adds up to the pink hue of the drink. Add one and a half tablespoon of white peach puree and a few drops of raspberry or cherry puree to a glass. Top the puree with Prosecco wine.
If you want to prepare a peach raspberry Bellini within a very short time, then add one part peach schnapps and three parts wine to a tall glass. Another method is to take tall glasses and dip their rim in fine sugar. Add an ounce of chilled peach schnapps into each glass and top them with seven ounces each of chilled champagne.
