Cookies are believed to have originated in Persia in the 1660s. The word 'cookie' was coined from the Dutch word 'koekje' which means 'little cake'. They are found all over the world, but have different names. In England, Australia and Scotland it is called biscuit or sweet buns and is usually served with tea.
Since the time they are being made, people have come up with a variety of cookies by adding different ingredients. One such variety is the pumpkin oatmeal cookie. Besides being delectable, they also have nutrients of oatmeal and pumpkin. Try out some of these recipes which are yummy and addictive.

Nutty Pumpkin Oatmeal Cookies

Ingredients
  • Pumpkin, 8 oz.
  • Oats, 8 oz.
  • Softened Butter, 1 cup
  • Eggs, 2
  • Baking Soda, ½ tsp.
  • Vanilla Extract, 1 tsp.
  • Sugar, Granulated, ¾ cup
  • Baking Powder, 1 tsp.
  • Ground Allspice, ½ tsp.
  • Ground Cinnamon, 1½ tsp.
  • All-purpose Flour, 16 oz.
  • Light Brown Sugar, 8 oz.
  • Cranberries or Raisins, 1 cup
  • Salt, ½ tsp.
  • Nuts - can include hazelnuts, pecans or walnuts, 1 cup
Preparation
1. Take the flour in a large mixing bowl and add oats, salt, cinnamon, baking powder, salt, all-spice, and baking soda. Mix till it is combined well and keep it aside.
2. In another bowl, break the eggs and blend it with pumpkin and vanilla. In a small pan, mix butter with sugar and pour it into the egg mixture.
3. Add the flour and oats mixture into it and stir till the batter becomes fluffy.
4. Cut the nuts and put in the batter with raisins or cranberries, and mix well. Preheat the oven at 350°F. Take a baking sheet and grease it slightly.
5. Place the batter in the baking sheet with small teaspoons. To ensure that it does not spread, keep a gap of 1 inch between every piece.
6. It will take approximately 15 minutes for the cookies to become firm and brown. Allow it to cool and serve at room temperature.

Ginger Pumpkin Oatmeal Cookies

Ingredients
  • Cooked Pumpkin Puree, 1 cup
  • Rolled Oats, 1 ⅓ cup
  • Nutmeg, ½ tsp.
  • Vanilla Extract, 1 tsp.
  • Canola Oil or Apple Sauce, 2/3 cup
  • Sugar, 1⅔ cup
  • Baking Soda, 1 tsp.
  • Ground Flax Seeds, 3 tsp.
  • Ground Ginger, 1 tsp.
  • Flour, 16 oz.
  • Cinnamon, 1 tsp.
  • Raisins, ½ cup
  • Salt, ¾ tsp.
  • Molasses, 2 tbsp.
  • Chocolate Chips, ½ cup
  • Walnuts, 8 oz.c
Preparation
1. In a big bowl, take oil or apple sauce, vanilla extract, pumpkin, flax seeds, molasses, and sugar together. Put it aside.
2. Mix oats, flour, cinnamon, ginger, baking soda, nutmeg, and salt in another bowl. Add the above mixture while stirring continuously.
3. When you think all ingredients have blended thoroughly, add the chopped walnuts, raisins, and chocolate chips, and mix again.
4. Grease a baking sheet and pour the batter into it. Bake them in a preheated oven at 350°F. It takes 15 minutes for the cookies to set completely.
5. After it cools, take it out and cut it with a cookie cutter. Store it in air tight containers and enjoy to your heart's content.
