Prepared mustard is made from mustard seeds, and it has a pungent and hot flavor. It is used in a variety of dishes ranging from sandwiches to vinaigrettes and marinades. These days, supermarkets are flooded with a huge variety of prepared mustards, and their taste and texture majorly depends upon the ingredients and method of preparation.
Mustard seeds are available in 3 different varieties, namely: yellow, brown, and black. Of these, the yellow variety has the mildest flavor and the black is the most pungent.

Prepared mustard is either smooth in texture or grainy. The smooth version is used in vinaigrettes for salads, as it emulsifies easily with the oil and vinegar.
The grainy version, on the other hand, is great for marinating meat, like ham and pork, as it gives the meat a robust flavor.
Prepared mustard like English, Dijon, and whole grain mustard is one of the most popular mustards. Of these, Dijon mustard is more widely used.

Prepared mustard is basically made by grinding mustard seeds with water and vinegar. In most of the recipes, wine, lime juice, and some other spices and herbs are added to make it all the more flavorsome. Therefore, all or some of these ingredients should be present in the substitute.
The most simple method of substituting prepared mustard is by using dry mustard. But, how does one go about using it? Well, given below is one such recipe followed by some other recipes to help you along.

Recipe #1

Ingredients
  • Mustard powder: ¼ cup
  • Water: ¼ cup
  • White wine vinegar: 2 tablespoons
  • Coarse sea salt: 1 teaspoon
  • Garlic powder: ¼ teaspoon
Method
  • In a bowl, add the mustard powder with water, white wine vinegar, garlic powder, and coarse sea salt.
  • Mix all the ingredients well with a spoon until you get a smooth lump-free mixture with a good consistency.
  • Your substitute is ready to be savored!

Recipe #2

Ingredients
  • Dry white wine: 1 tablespoon
  • Rice wine vinegar: 2 teaspoons
  • Yellow mustard seeds: 1 teaspoon
Method
  • First soak the mustard seeds in a cup of water for about 15 to 20 minutes.
  • Now, grind the seeds with rice wine vinegar with the help of a mortar and pestle to a fine paste.
  • Lastly, add the dry white wine and your substitute is ready!

Ingredients
  • Mayonnaise: 2 tablespoons
  • Wasabi powder: ½ tablespoon
  • Water: 1 teaspoon
Method
  1. In a small bowl, mix the wasabi paste with water to form a thick paste.
  2. Let this mixture stand undisturbed for a minute or two.
  3. In the end, add mayonnaise and mix well.

Ingredients
  • Horseradish root: 1 piece (8-inch long)
  • Water: 2 tablespoons
  • White wine vinegar: 1 tablespoon
  • Pinch of salt
Method

  • Then, add the white wine vinegar and salt and process once again.
  • Clean and peel the horseradish root and cut it into small pieces.
  • Place the chopped horseradish root in a food processor and process with 2 tablespoons of water until you get a smooth paste.
  • Transfer the horseradish mixture into a small jar and use it as a substitute for prepared mustard.

If you are using a mustard substitute that involves grinding mustard seeds, then ensure that you use a lesser quantity of it as mustard seeds are quite pungent.
