Homemade Pancake Mix

Using this homemade pancake mix, you can easily prepare pancakes in a matter of minutes, whenever you feeling like having one. It shortens down the process of making pancakes. You can use this mix for about three months from the date of preparation.
Ingredients
  • 6 cups All-purpose flour
  • 2 tbsp. Sugar
  • 1 tbsp. kosher salt
  • 3 tsp. baking powder
  • 1½ tsp. baking soda
Directions
Put all the ingredients into a large bowl and mix well. Store this instant homemade pancake mix in an airtight container.
Basic Pancake Recipe
Ingredients
  • 2 cups Instant homemade pancake mix
  • 2 cups buttermilk
  • 2 cups fresh fruit
  • 2 eggs
  • 4 tbsp. melted butter
  • 1 tbsp. non-melted butter
Procedure
  • Separate the egg whites from the egg yolk. In a bowl, whisk the egg whites well with the buttermilk.
  • In another bowl, whisk the egg yolk well with the melted butter.
  • In a large bowl, put the instant homemade pancake mix, pour both the mixtures and whisk it into a smooth batter.
  • Place a pan on the stove and heat it for about a minute. Pour a drop of the batter, to check if the pan is adequately hot.
  • Once it has heated properly, use a little non-melted butter to gently grease the surface of the pan and then wipe it off with a paper towel.
  • Using a ladle, gently pour some batter onto the pan forming a uniform shape. Drop a few pieces of the fresh fruit onto the batter on the pan.
  • When bubbles start forming on the edges and it starts turning golden brown, flip the pancake and cook until the flipped side turns golden brown.
  • Gently remove it from the pan and serve hot.
German Apple Pancake

Ingredients
  • 2 apples (peeled and thinly sliced)
  • 2 cups Instant homemade pancake mix
  • ⅔ cup milk
  • 4 eggs
  • 3 tbsp. Sugar
  • 2 tbsp. butter
  • ¾ tbsp. cinnamon powder
  • ½ tbsp. salt
Procedure
  • Preheat the oven to 400 °F.
  • In a large bowl, add the instant homemade pancake mix, a tablespoon of sugar, salt, and milk and beat well.
  • In another bowl, beat the eggs until they become fluffy and thick.
  • Add this to the mixture and beat well. Grease the pan surface with a tablespoon of butter and preheat it in the hot oven.
  • Once heated, pour the batter in small portions and arrange the apple slices on the top of them.
  • Sprinkle the pancakes with the remaining sugar and cinnamon powder and bake for around 20 minutes. Serve hot along with warm maple syrup.
Cornmeal Pancake
Ingredients
  • 2 cups Instant homemade pancake mix
  • 1 ½ cups water
  • ½ cup cornmeal
  • ¼ cup sugar
  • ¼ cup buttermilk
  • 2 tbsp. butter
  • 1 tsp. baking powder
  • 1 tsp. Salt
  • ¾ tsp. baking soda
  • 1 egg
Procedure
  • In a saucepan, add the cornmeal to the water and bring to boil. Then, reduce the heat and let it boil for five more minutes.
  • In the meanwhile, gently beat the egg, until it turns fluffy and thick.
  • Turn off the heat and transfer the cornmeal mixture into a large bowl. Pour into it, the buttermilk and stir well.
  • Into this, sift the instant homemade pancake mix, salt, sugar, baking soda, and baking powder and stir well.
  • Add the beaten egg into this mixture and stir well.
  • Add the butter to it and stir the batter well.
  • Heat a girdle, grease it, and pour the batter onto it, in round portions.
  • Cook until the base turns golden brown, then flip over to the other side.
  • Cook for a few minutes and serve hot with honey.
