Easy-peasy Pad Thai Noodle Recipes

Pad Thai is a very popular dish originating from Thailand. Here are some recipes that you can refer and prepare this delectable dish at home.
Pad Thai traditionally consists of stir-fried noodles combined with various other spices and ingredients. Primarily, ingredients such as fish sauce, eggs, shrimp, or chicken are used. Enlisted in next slides are two versions of this delicious dish.

With Rice Stick Noodles

Ingredients
  • Rice Stick Noodles, 0.55 lb.
  • Lemons, 2 (juiced)
  • Peanut Oil, 2 tbsp.
  • Chicken Breast, 2 (thinly sliced fillets)
  • Eggs, 2 (lightly beaten)
  • Bean Sprouts, 1 cup
  • Coriander Leaves, ½ cup
  • Lime Wedges, as garnish
  • Fish Sauce, 2 tbsp.
  • Brown Sugar, 2 tbsp.
  • Peanuts, ¼ cup (roasted and finely chopped)
  • Green Prawns, 1.10 lbs. (peeled and deveined)
  • Green Onions, 3 (thinly sliced diagonally)
  • Small Red Chilies, 2 (deseeded and finely chopped)
Preparation
Begin by placing the noodles on a heat-proof bowl and pour hot water over it. Let it rest for a while and then drain all the water. Rinse the noodles under cold water. Meanwhile, combine fish sauce, lemon juice, and sugar in a jug. Mix it well with a fork. Then, heat a wok over high heat and add some oil.
Now, add the chicken and stir-fry it for a period of 2 minutes. Then, add the chilies, prawns, and onions. Stir-fry the same for 2 minutes. Once done, add the noodles and stir-fry it again for 2 minutes.
Then, add the lemon juice mixture to the wok and toss it well. Pour the lightly beaten eggs over the noodles and stir-fry it for 1 minute. Add sprouts and toss the whole preparation well. Once done, spoon the noodles onto the plates and sprinkle some peanuts and coriander leaves as garnish. While serving, you can garnish it further with some lime wedges.

With Dry Sen Lek Noodles

Ingredients
  • Oil, 4 tbsp.
  • Egg, 1
  • Lemon Juice, 2 tbsp.
  • Fish Sauce, 1½ tbsp.
  • Sugar, ½ tsp.
  • Chili Powder, ½ tsp.
  • Turnip, 1 tbsp. (chopped and preserved)
  • Bean Sprouts, 30 gm.
  • Lime Wedges
  • Garlic Cloves, 2 (finely chopped)
  • Roast Peanuts, 2 tbsp. (chopped)
  • Spring Onions, 2 (chopped)
  • Sprig of Coriander Leaf, (chopped)
  • Dried Shrimp, 2 tbsp. (ground or pounded)
  • Dry Sen Lek Noodles, 4 oz. (soaked in water for 20 minutes) (You can also use any other medium flat noodles)
Preparation
Take a wok and heat some oil in it. Then add the garlic and fry till it turns a shade of golden brown. In the meantime, break an egg into the wok. Stir the preparation well and cook it for a couple of seconds. Then, add the noodles and stir well again.
Now add the following ingredients one by one - lemon juice, fish sauce, 1 tbsp. peanuts, 1 tbsp. dried shrimp, sugar, chili powder, and turnip. Also add 1 tbsp. of bean sprouts along with the spring onions. Once it gets cooked, you can serve it hot with chili sauce.
While serving, you can arrange the remaining dried shrimp, peanuts, and bean sprouts, around the dish. Use some coriander and lime wedges as garnish.
