Oatmeal Cookie Recipes

Are you bored of the store-bought cookies? Why not make some on your own? Here are some simple oatmeal cookie recipes for you.
Surprisingly, cookies were not created intentionally. Some Dutch cooks were testing the oven temperature with small cakes. They called these koekje, which literally means 'little cake', and these turned into cookies later. They are now available in an innumerable variety, and some of their classifications include bar, drop, sandwich, filled, and molded cookies. And out of the drop cookies, oatmeal ones take care of our taste and health at the same time.

Soft Oatmeal Cookies

Ingredients:
  • Butter (softened), 1 cup
  • White sugar, 1 cup
  • Brown sugar (packed), 1 cup
  • Eggs, 2
  • Vanilla extract, 1 teaspoon
  • All-purpose flour, 2 cups
  • Baking soda, 1 teaspoon
  • Salt, 1 teaspoon
  • Ground cinnamon, 1½ teaspoon
  • Quick cooking oaks, 3 cups
Preparation:
  • Take a medium-sized bowl and blend the butter, white sugar, and brown sugar in it. Next, beat the eggs one at a time, and add them to the bowl along with the vanilla extract.
  • Add in the flour, baking soda, salt, and cinnamon and blend well. In the end, add in the oats, and mix together.

  • Make sure the mixture has a doughy consistency, and refrigerate it for an hour.
  • Preheat the oven to 375 °F.
  • Roll out the dough, cut it into different-shaped cookies using cookie cutters, and dredge the cookies in sugar.

  • Place these on a buttered cookie sheet with some space between them.
  • Bake them in the oven for 10 minutes.
  • Allow the cookies to cool on the cookie sheet before storing them.

Oatmeal Raisin Cookies

Ingredients:
  • Eggs (beaten), 3
  • Raisins, 1 cup
  • Vanilla extract, 1 teaspoon
  • Butter, 1 cup
  • Brown sugar (packed), 1 cup
  • White sugar, 1 cup
  • All-purpose flour, 2½ cups
  • Ground cinnamon, 1 teaspoon
  • Baking soda, 2 teaspoons
  • Rolled oats, 2 cups
  • Pecans (chopped), 1 cup
Preparation:
  • Add the eggs, vanilla extract, and raisins to a small bowl. Mix these together and let the mixture stand for an hour.
  • Preheat the oven to 350 °F.
  • In another large bowl, mix the butter, brown sugar, white sugar, sifted flour, cinnamon, and baking soda together. To this, add the raisin and egg mixture along with the rolled oats.
  • Roll out the dough and cut it using a cookie cutter.
  • Place the cookies on a greased cookie sheet. Bake for 10 minutes, and let them cool before serving.

Oatmeal Butterscotch cookies

Ingredients:
  • Butter (softened), ¾ cup
  • White sugar, ¾ cup
  • Brown sugar (packed), ¾ cup
  • Eggs, 2
  • Vanilla extract, 1 teaspoon
  • All-purpose flour, 1¼ cup
  • Baking soda, 1 teaspoon
  • Ground cinnamon, ½ teaspoon
  • Salt, ½ teaspoon
  • Rolled oats, 3 cups
  • Butterscotch chips, 1⅔ cup
Preparation:
  • Preheat the oven to 375 °F.
  • Mix the eggs, butter, and brown and white sugar together in a large bowl, adding the vanilla extract towards the end.
  • Gradually add in the flour, baking soda, cinnamon, salt, oats, and butterscotch chips.
  • Roll the dough out, and cut it using a cookie cutter.
  • Place the cookies on a cookie sheet, and bake for 10 minutes till they turn golden-brown.
