Cheesecake Mincemeat Pie

Ingredients
  • Baked pie crust, 1, 10"
  • Eggs, 2
  • Prepared mincemeat, 2 cups
  • Walnuts, chopped, ½ cup
  • Sugar, ½ cup
  • Sugar, 2 tablespoons
  • Milk, 1 tablespoon
  • Vanilla, ½ tablespoon
  • Cream cheese, softened, 12 oz.
  • Sour cream, 8 oz.
Directions

Mix mincemeat and walnuts together in a bowl, and spread it in the pre-baked pie crust. Take a separate large bowl to combine eggs, cream cheese, ½ cup sugar, and milk together. With an electric mixer, beat the mixture properly, and prepare the batter. Pour the batter over the mincemeat mixture, and spread it evenly. Put the pie inside a 375ºF preheated oven for 30―35 minutes.
Now take a different bowl and stir in 2 tablespoons sugar, sour cream, vanilla together. Once the pie is baked, smear this over it and bake for another 5 minutes. Remove the pie from the oven and let it cool down before you chill it in the refrigerator for 5―6 hours.

Apple Mincemeat Pie

Ingredients
  • Pastry for double crust pie, 9"
  • Applesauce, canned, 2 cans
  • Prepared mincemeat, 2 cups
  • Brown sugar, ½ cup
  • Butter, 1 tablespoon
  • Lemon juice, 1 tablespoon
  • Lemon peel, ½ tablespoon
Directions

Mix applesauce, mincemeat, lemon juice, brown sugar, and lemon peel in a bowl. Pour the applesauce on half of the pastry. Lightly smear the pie with butter, and cut long stripes of the remaining pastry. Arrange the strips in lattice manner on top of the ingredients. Trim and flute the stripes to make the standing edge.
Put the pie inside a 425ºF preheated oven for 40 minutes. Let the lattice stripes turn golden brown before you remove the pie out of the oven. You can either chill it and serve it cold, or let the pie cool down a bit before serving it warm.

Cranberry Mincemeat Pie

Ingredients
  • Pastry for double crust pie, 1
  • Whole cranberries, pitted, 2 cups
  • Prepared mincemeat, 2 cups
  • Sugar, 1 cup
  • Flour, 2 tablespoons
  • Butter, 1 tablespoon
Directions

Mix flour and sugar together in a small bowl. Add mincemeat and cranberries into it, and mix again. Take half of the pastry into the pie plate and pour the mixture in. Lightly smear the pie with butter, cover the top of the pie with the remaining pastry, and seal the edges properly. Bake the pie inside a 425ºF preheated oven for 30―35 minutes till the crust is brown. Once the pie is ready, let it cool down a bit before you serve it.
