Honey Sweet Potatoes

Ingredients

  • Sweet potatoes, 2 (medium-sized)
  • Salt, pepper, cinnamon, and butter to taste
  • Honey
  • Ginger
  • Pepper
Directions
  • Wash and clean the sweet potatoes thoroughly. To allow moisture evaporation, prick them with a fork or with the tip of a knife.
  • In a microwave safe plate, cook the sweet potatoes on high for about 6 minutes.
  • Turn them and microwave the other side for another 6 minutes.
  • Allow the baked sweet potatoes to cool down and cut them into half longitudinally.
  • Scoop out the cooked pulp, while keeping the shell intact.
  • In an electric mixer, add pulp, honey, ginger, cinnamon, pepper, and salt, and blend the mixture for 2-3 minutes.
  • Add the mixture into the baked potato shells, cover them, and microwave at high setting for 3-4 minutes.
  • Serve this with margarine and pecans.
If you have a hectic schedule, you can consider baking many sweet potatoes at a time on holidays and storing them by placing them in the freezer.
