Leftover Turkey Recipes

Turkey is a favorite Thanksgiving dish. However, when there are leftovers, many people do not know what to do with them. Given ahead are a few recipes to help you with the same.
Leftover turkey can be used in unconventional recipes to prepare delicious meals. The recipes given below are easy to make and do not require much preparation time. They will be very popular with your family members, as well.

Tortilla Cups with Turkey Stuffing

Ingredients
  • 2½ cups of shredded cooked turkey
  • 1 cup of creamy, curried dressing
  • 4 flour tortillas (6 inches wide)
  • 1 large papaya (peeled, seeded, and sliced)
  • 3 kiwifruit (peeled and sliced in half)
  • ¼ cup of blanched, slivered almonds (toasted)
  • Spinach leaves (stemmed, washed, and dried)
Procedure
Mix the dressing with the turkey properly, in a large bowl. Refrigerate this mixture for 2 hours. Wrap the tortillas in an aluminum foil and place them in the oven for 10 minutes. The oven should be preheated to a temperature of 350 °F. Take custard cups and coat them with nonstick cooking spray, on the inside. Take the tortillas out of the oven, after the stipulated time.
Increase the temperature of the oven to 400 °F. Press one tortilla gently into the prepared custard cup, and place it in the oven. Make sure you do this for the others, one at a time. Leave the custard cup in the oven for 10 minutes, until each one is baked well.
Remove it from the oven and allow it to cool. Add the papaya, almonds, and kiwifruit, to the turkey mixture, before loading each tortilla cup with it. It can be decorated with the spinach leaves before being served.

Turkey Florentine

Ingredients
  • 3 tablespoons of butter
  • 3 tablespoons of flour
  • 1 cup of milk
  • ½ cup of cream
  • 3 tablespoons of chopped onions
  • 1 tablespoon of olive oil
  • Sliced and cooked turkey (for 6 servings)
  • 2 pounds of spinach (cooked and chopped)
  • ¼ tablespoon of grated nutmeg
  • Salt and pepper, to taste
Procedure
In a pan, melt the butter and add the flour to it. Stir this mixture till it blends, completely. Bring the milk and cream to a boil, in another pan. After it becomes hot, add it to the butter and flour mixture. Mix it vigorously until everything is blended well, and the mixture becomes smooth and thick.
Add the salt and pepper to the mixture, to taste. To a third pan, add the olive oil and onions. After the onions turn translucent, sauté the spinach with it, till its moisture evaporates, completely. Add ½ a cup of the sauce and nutmeg to the mixture, and heat it, again. On a platter, spread the spinach out and place the sliced turkey pieces on top of it. This recipe can be served in a casserole.

Sweet Potato and Turkey Croquettes

Ingredients
  • 1 tablespoon of butter
  • 1 onion (chopped)
  • Salt and chili powder (as per your taste)
  • ¼ teaspoon of nutmeg
  • 1½ cups of sweet potato (mashed)
  • 1 egg yolk
  • 1 tablespoon of milk
  • ½ cup of turkey (cooked)
  • 1 cup of flour
  • 2 eggs
  • Peanut oil (for deep frying)
  • 1 cup of breadcrumbs
Procedure
Add the butter to a pan and allow it to melt on moderate heat. Add the onions to it and allow it to cook, until brown. Add the salt, chili powder, and nutmeg, to the onions, while it cooks.
Take it off the heat and put it in a large bowl. Add the milk, mashed potatoes, egg yolk, and turkey, to the bowl. Mix it up together. Keep this mixture in the refrigerator for 12 hours, after which it can be used to make croquettes. (Check for single spaces after full-stops)
Before making the croquettes, sprinkle some of the flour on a large plate, and crack the eggs into a bowl. Take a tablespoon of the mixture and ball it up using the palms of your hands. Roll this ball on the plate with the flour, and shake off the excess.
After this, dip the ball in the egg wash and make sure it is well-coated. Deep-fry these croquettes in a shallow pan containing the peanut oil, till their color changes to golden brown.
These meals are as good as any delicacy served in restaurants. They will be loved and praised by your friends and family.
