Leftover Ham Recipes

We find a lot of leftover ingredients in our refrigerator and usually wonder how can they be used effectively. The recipes enlisted here reveal a unique way to prepare some appetizing dishes without wasting your unused ham. Read more to know about some interesting dishes.
Ham, the rump and thigh of a hog, is used in a cured or smoked form. You can prepare various delicious dishes with it for a cocktail party or a family dinner on the weekend. If you find a sufficient amount of unused ham from your holiday feast, don't waste it. You can use it to prepare a variety of dishes. Following are some of the most popular ones.

Potato Pancakes with Ham Topping

Ingredients:
  • Medium-sized Potatoes, (boiled and mashed) 5
  • Ham, 6 slices
  • Rapid Rise Yeast, 1 tbsp.
  • Lukewarm Water, 1¼ cup
  • Sour Cream, 12 dollops
  • Salt and Pepper, as per taste
  • Plain All-purpose Flour, 1½ cup
  • Vegetable Oil, (for frying)
  • Green Onions, (chopped for garnish) 3
Preparation:
Mix mashed potatoes, flour, yeast, and water in a large bowl. Blend well. Keep it in a warm place for about 30 minutes, so that the dough doubles in size. Put 1 tbsp. oil on a hot non-stick frying pan. Drop spoonfuls of the dough, each about 2-3 inches in diameter, into the pan.
Cook the potato pancakes for about 3-5 minutes over a medium heat until they turn light golden-brown from both sides. Season it with pepper and salt, as per taste. Transfer it to a serving plate.
Add a small dollop of sour cream as topping and place ½ piece of rolled ham on it. Sprinkle some ground pepper and chopped green onion on top, to garnish the dish. It can be served with tomato sauce.

Baked Cheese and Ham

Ingredients:
  • Ham, (chopped) 8 oz.
  • Canned Mushrooms, (drained) 4 oz.
  • Large Onion, (minced) 1
  • Salt, ½ tsp.
  • Milk, 3 cups
  • Cheese, (choose any one - Swiss, Cheddar, Pepper Jack or Mozzarella) (shredded) 2 cups
  • Eggs, 6
  • Reduced-fat Baking Mix, 1½ cup
  • Frozen Broccoli, 16 oz.
  • Pimentos, (optional) (chopped) 2 oz.
Preparation:
First preheat the oven to 350° F. Keep the mushrooms and onions in a skillet and fry quickly on medium heat. Cover the baking dish with a vegetable spray. Put the layers of ham, broccoli, onions, cheese, and pimentos at the bottom of the prepared baking dish. Make a smooth mixture of milk, eggs and baking mix.
Pour this over the ham mixture. Bake for about 50-60 minutes, until the texture becomes firm. You should cover the baking dish with a foil for the last 15 minutes, so that it does not get overcooked. It can be served warm or cold with pepper cheese sauce.

Ham and Vegetable Medley

Ingredients:
  • Cooked Ham, (cut into thin strips) 4 cups
  • Red Bell Peppers, (sliced) 1 cup
  • Green Bell Peppers, (sliced) 1 cup
  • Carrots, 2 cups
  • Frozen Green Peas, 1 cup
  • Onion, (sliced into rings) 1
  • Fresh Broccoli Florets, 2 cups
  • French Green Beans, (drained) 2 cups
  • Eggs, (lightly beaten) 2
  • Vegetable Oil, 1 tbsp.
  • Cornstarch, 1 tsp.
  • Soy Sauce, 1 tbsp.
  • Water, ½ cup
Preparation:
Put onions, carrots, green peas, green beans, red peppers, green peppers, and broccoli into the pre-heated oil, in a large skillet. Cover and allow it to shallow fry for 15 minutes. Prepare a well in the center of the vegetables and place the ham in it. Stir it to moisten and simmer it for about 5-10 minutes.
Scramble the eggs until firm in a small and lightly-greased skillet. Cut the eggs into small pieces. Mix the ham, vegetables and eggs together. Prepare a mixture of cornstarch, soy sauce and water in a bowl, and pour it into the center of the contents in the skillet.
Stir it immediately till it starts to thicken. Sauté it for 5 - 10 minutes, until it gets cooked properly. Serve it with bread or steamed rice.

Ham Loaf

Ingredients:
  • Ground Baked Ham, 1½ lb.
  • Quick Cooking Oatmeal, (uncooked) ½ cup
  • Ground Fresh Pork, 1 lb.
  • Onion, (finely chopped) 1
  • Spicy Brown Mustard or Prepared Mustard, 1 tbsp.
  • Milk, ½ cup
  • Large Garlic, (minced or chopped fine) 1 clove
  • Eggs, (slightly beaten) 3
  • Cider Vinegar, ⅓ cup
  • Brown Sugar, ⅓ cup
  • Dried Parsley Flakes, 1 tbsp.
Preparation:
Heat the oven to 350° F. Crush the chunks of ham to desired consistency in the food processor. Make a mixture of ham, mustard, fresh pork, oatmeal, garlic, eggs, milk, and parsley in a large bowl. Make two loaves in the baking dish. Combine glaze in a small bowl. Pour the glaze over the loaves and bake it uncovered for 60-70 minutes. Baste it once or twice during baking. Serve it warm.
