Keto Pesto Chicken Casserole with Feta Cheese Recipe

Chicken casserole is a super-delicious and easy dish to make. It’s perfect for anyone who is on a healthy diet, Mediterranean diet or a low-carb diet. In fact, it’s one of the best keto recipes that low-carb and ketogenic dieters love.

Let the Oven Do All the Work

In today’s simple recipe, you will need chicken meat as the main source of protein. You can use chicken breast or thigh. First, you will need to cook chicken in a frying pan with butter. After that, simply bake the chicken with the remaining ingredients in a baking dish. After 20 to 30 minutes, your casserole will be ready for serving.

Ingredients

  • 1 lb chicken thighs, or chicken breasts
  • 2 tbsp butter, for frying
  • 1 cups heavy cream
  • 3 oz red pesto sauce, or green pesto
  • 1/2 cup pitted olives
  • 2/3 cup feta cheese, diced
  • 2 garlic clove, finely chopped
  • salt and pepper, to taste
Preheat the oven to 400°F (200°C).
Use a cutting board and a sharp knife to cut chicken meat into small bite-sized pieces then season it with salt and pepper.
In a fry pan over medium high heat, add butter in then add garlic. Give it a good stir. Add chopped chicken in and fry between 7-10 minutes until golden brown then remove.
Mix pesto and heavy cream in a bowl.
In a casserole dish, add fried chicken pieces in. Next, add olives, feta cheese add then pesto-heavy cream mixture.
Bake between 20-30 minutes in a preheated oven until the dish turns bubbly and you can see light brown color around the edges.
Serve this chicken casserole with fresh leafy greens or Greek salad. Enjoy!
