Ingredients

  • ½ cup unsalted butter (1 stick)
  • ¼ cup all-purpose flour
  • 1 tablespoon corn syrup (light)
  • ½ cup golden brown sugar (packed)
  • 2 tablespoons cream (heavy)
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • ¾ cup quick cooking Irish oatmeal

Directions

Preheat the oven to 350 degrees F. This is one of those Irish cookie recipes which is made slightly in a different manner. Excluding the oatmeal, salt and flour quantities, mix the rest of the ingredients in a large bowl using an electric mixer.
Once the whole mixture is prepared and mixed thoroughly, add the three ingredients which were excluded in the beginning. Mix everything very well and transfer the dough on a separate plate.
Shape the dough into shapes of a ball and when you complete shaping the entire dough, refrigerate it until they gain a firm shape. The refrigeration must be for about 30 minutes.
Now remove the firm dough balls and place it on a baking sheet. Flatten the dough in between your palms to give it a flat round shape. Place the sheets into the oven for a bake. Bake them for about 10 minutes or until lacy-golden brown in color. Similarly, bake the rest of the dough and make sure after you remove them from the oven in the end, you allow it to cool down for a minute or two before eating. Serve and enjoy!

Ingredients

  • 2 tablespoons water
  • ½ cup unsalted butter (softened)
  • 1 ¼ cup wholemeal flour (extra-coarse)
  • ¾ cup light brown sugar (firmly packed)
  • ¼ cup cacao nibs fresh cracked sea salt
  • 1 tablespoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • 2 tablespoons all-purpose flour

Directions

Preheat the oven to 350 degrees F. In a bowl, cream the measured quantity of brown sugar and butter until it is nice, fluffy and light in color. Now add water, flour and vanilla extract to the above mixture and stir the whole mixture properly. Also add wholemeal flour to it and mix it well. This is where you prepare the dough for an Irish lace cookie.
Take small scoops of this dough and equally place it on the baking sheets about an inch apart from each other. You need to keep them at a distance because while they get baked, they tend to rise and spread out. Moving on, place the sheets into the oven and bake them for 10-15 minutes.
Flip them in between so that they roast at both the ends. After a while if they are ready, remove them from the oven, spread them on the rack and sprinkle some kosher salt on top of it. Sit for them to cool for a while and serve.

  • 4 tablespoons flour
  • 1 tablespoon vanilla extract
  • 1 cup brown sugar (firmly packed)
  • 2 tablespoons low-fat milk
  • 1 cup rolled oats (old-fashioned)

Directions

From a bunch of all Irish cookie recipes, this one over here is popularly known as Ruthee's Irish Lace Cookie recipe and is the most opted one for a tea-time snack. Preheat the oven at 350 degrees F.
Follow these instructions: In a bowl, cream some sugar and butter and to it add some vanilla, low-fat milk, flour, some rolled oats and mix all these ingredients well.
On the other hand, take 2 baking sheets and keep them ready by greasing them with some oil and flour. Now take the batter bowl and one by one drop tablespoons of batter on the baking sheets. Make sure they are spaced out sufficiently from each other.
Place the sheets with the cookie dough in the oven for a good bake and bake them till they flatten out and turn a little dry. Also see that the cookies need to turn a little golden brown (roasted-look) to be sure that they are ready to eat. Remove them out of the oven and allow them to cool for a while. Transfer it from the sheets to a serving plate and serve it freshly baked!
