Irish Cookie Recipes

Homemade cookies have always been a favorite with kids and grownups alike. Cookies come in various shapes and sizes and almost every cuisine has its unique cookie recipe.
Drop cookies, chocolate chip cookies, pressed cookies, car cookies, and so on; the variety is endless. All these cookie recipes are very easy to make and the outcome is absolutely delicious. Cookies can also be had at any time of the day, be it as an accompaniment during your coffee break or when you just need a pick-me-up batch of cookies to start your day.

Irish Shamrock Cookies

The shamrock is a symbol of Ireland and a registered trademark of the Republic of Ireland. The shamrock is a three-leafed old white clover. Hence, these shamrock cookies have an authentic Irish touch. They not only taste delicious but also look very appetizing.
Ingredients:
  • Beaten eggs: 2
  • All-purpose flour: 1 cup
  • Sugar: 1 cup
  • Softened Butter: ½ cup
  • Milk: ½ cup
  • Vanilla extract: 1 tsp.
  • Baking powder: 1 tsp.
  • Green sprinkles: a few
Direction:

1. Firstly, mix the butter and sugar thoroughly.
2. Then, add the eggs, milk, vanilla extract, and baking powder.
3. Mix the ingredients well to form a homogenous liquid.
4. Now, it is time to add the flour. Make sure that the flour has been sifted and has no lumps in it.
5. Slowly, add the flour and keep on stirring till you get a consistency that is easy to handle.
6. Now, roll the dough and sprinkle some sugar sprinkles on to it.
7. Use a shamrock cookie cutter to cut out the cookies.
8. Bake the cookies at about 350°F till they turn golden brown.

Irish Lace Cookies

Well this one's another traditional Irish cookie recipe that is easy to make and looks very pretty. With crunchy oats and the goodness of milk, this cookie is a delicious and healthy snack!
Ingredients:
  • Quick-cooking irish oatmeal: ¾ cup
  • Unsalted butter: ½ cup
  • Packed golden brown sugar: ½ cup
  • All-purpose flour: ¼ cup
  • Heavy cream: 2 tbsp.
  • Light corn syrup: 1 tbsp.
  • Vanilla: ½ tsp.
  • Salt: ¼ tsp.
Direction:

1. Using an electric mixer, beat together butter, sugar, corn syrup, cream, and vanilla in a large bowl till the mixture becomes light and fluffy.
2. Then, add oatmeal, flour, and salt and beat just enough till it forms a soft dough.
3. Now, wrap the dough in a waxed paper and refrigerate it for about 30 minutes till it becomes a little firm.
4. Next, preheat the oven to 350ºF.
5. Now, line the baking sheet with parchment paper. Then, using 1 tbsp. of dough for each, shape the dough into 12 balls of equal size.
6. Then, place 3 balls on the baking sheet and space them evenly.
7. Carefully flatten the dough balls with your palms.
8. Bake for about 10 minutes until golden brown.
9. Thereafter, let the cookies cool on the baking sheet itself for about 2 minutes.
10.  Next, using a metal spatula, remove the cookies and let them cool completely.
11. Repeat the same procedure with the remaining dough balls.
