Legumes are in different colors, shapes and sizes. They contain fiber, potassium, calories, magnesium, iron etc.
There are 5 types of legumes:
- Black-eyed peas
- Chickpeas
- Beans
- Peanuts
- Lentils
Black-eyed Peas
Black-eyed peas have a creamy texture and earthy taste. They are used in salads and different recipes.
Beans
Beans include navy beans, white beans, cannellini, kidney beans, adzuki, pinto beans, soybeans, etc. These are used in a variety of dishes, stews, soups and salad. They have a creamy taste.
Chickpeas
Chickpeas are called as garbanzo beans. They have a buttery texture. These are used in different recipes for a slightly nutty taste.
Peanuts
Peanut is known as a groundnut. Peanuts have a distinctive taste. They can be cooked in different ways like boiling and roasting with salt. They are used in cuisine, salad, sauce, stew etc.
Lentils
Green and brown lentils are most popular. These are used in soups, salads, stews and a variety of dishes for mild earthy and nutty flavor. They have a mushy texture.
