How to Prepare Spaghetti Squash

Use these spaghetti squash recipes to create some interesting dishes for dinner or informal get-together. They make an excellent option for healthy and delicious diet.
Spaghetti squash makes an ideal ingredient to whip up some delicious and healthy recipes. It is a rich source of vitamin A, folic acid, potassium, and beta-carotene. This vegetable can be cooked easily in oven, slow cooker, or even in a microwave.

Recipe 1

Ingredients
  • Spaghetti squash, 2¼ pounds
  • Salt, ½ teaspoon
  • Butter, 2½ tablespoons
  • Freshly ground black pepper, ⅛ teaspoon
  • Mixed herbs: basil, chives, chervil, parsley, and sage (finely chopped), 2½ tablespoons
Preparation
Preheat the oven to 375 °F. Then, using a sharp knife, cut open the spaghetti squash in 2 halves as per the length. Once done, place the cut side facing downwards in a baking dish. Cover the same with an aluminum foil, and bake it for around 45 minutes. Now, turn the squash over, and cover it with the foil again. Cook for an additional 15 minutes till the squash turns tender.
Once done, remove it from the oven, and uncover it so that it cools slightly. With the help of a spoon, remove the seeds. Use a fork to pull the strands away from the peel and place them strands in the mixing bowl. Then, heat a skillet and add the herbs, butter, and the spaghetti squash to it. Use some salt and pepper to taste and toss the ingredients around. Once cooked, serve immediately.

Ingredients
  • Spaghetti squash (halved according to length and seeded), 1
  • Onion (chopped), 1
  • Garlic clove (minced), 1
  • Vegetable oil, 2 tablespoons
  • Fresh basil (chopped), 2 tablespoons
  • Tomatoes (chopped), 1½ cups
  • Cheese (crumbled), ¾ cup
  • Black olives (sliced), 3 tablespoons
Preparation
Preheat the oven to 350 °F. Lightly grease a baking sheet and place the spaghetti squash with the cut side down on it. Bake this for around 30 minutes in the oven. Once done, remove the squash from the oven, and place it aside to cool.
In the meantime, place a skillet over medium heat and add the oil to it. Cook the onion in it till it turns tender. Then, add in the garlic and cook it for about 2 minutes. Now, add the tomatoes as well, and cook the same till they turn slightly warm. With the help of a large spoon, remove the strands of the spaghetti squash. Mix the squash with the cooked vegetables, olives, cheese, and basil. Serve hot.

Tips to Remember:

  • It is always advisable to cut the spaghetti squash before you cook it, rather than cooking it whole. This way, it cooks faster.
  • The seeds can be roasted like pumpkin seeds; these are nutritious and delicious.
  • Uncooked spaghetti squash (whole) is best stored at 50 degrees. It can remain fresh in this way for several weeks.
  • Serve the cooked squash with sauces and herbs to add to the flavor.
