How to Prepare Peanut Butter Chicken

So, you love peanut butter and chicken is your staple diet; have you ever wondered how it would taste like together? If you're not so positive about the combination, then well don't judge this dish till you've tasted it. Your kids won't get enough of this one and your friends are going to be coming home more often. Peanut Butter Chicken

Ingredients
  • 1 can of diced tomatoes with juice
  • 1 medium onion
  • ¾ cup chicken stock
  • 1 pound skinless and boneless chicken breast
  • ¾ cup creamy peanut butter
  • 8 fresh mushrooms
  • 1/8 teaspoon red pepper flakes
  • Salt and pepper to taste
Preparation
Cut the chicken breast into 1 inch cubes. Heat oil in a large pan and add the chicken pieces. Slice the onions and mushrooms and add in the pan, also add the red pepper flakes. Add salt and pepper according to taste. Stir continuously and cook till the onions are translucent.
Next pour the chicken stock and tomatoes into the pan. Simmer, till the chicken is cooked.  Add peanut butter while stirring continuously and cook till the sauce is thick. This will take not more than 2 minutes, you can add more peanut butter if required. Serve with rice or noodles.

Peanut Butter Chicken Stir Fry

Ingredients
  • 3 cups fresh mushroom
  • 1½ cups red pepper
  • 4-6 boneless chicken breast
  • 1½ cups green pepper
  • 1 large onion
  • 5 cloves garlic
  • 2 tablespoons ground ginger
  • ½ cup peanut butter
  • 2 tablespoons cornstarch
  • 1½ cups chicken broth
  • ½ tablespoon pepper
  • 6 tablespoons soy sauce
Preparation
To make the sauce, in a bowl, mix cornstarch, chicken broth, pepper, ginger, soy sauce and peanut butter and stir till it is smooth. Stir fry chicken breasts in oil, till it is cooked. Remove the chicken and keep it aside. Slice onions and add pepper and stir fry onions till they are cooked.
Next, slice the mushrooms and mince the garlic and add into the pan. Fry for some more minutes, and add the sauce. Cook until the sauce is a little thick. Add chicken and cook for a few more minutes. Serve hot with rice or noodles.

Chicken Satay with Crunchy Peanut Butter

Ingredients
  • 1 tablespoon Thai red curry paste
  • 5 tablespoons crunchy peanut butter
  • 8 large chicken wings
  • 2 tablespoons brown sugar
  • 120 ml coconut milk
  • 1 clove garlic, crushed
  • 1 tablespoon ground cumin
  • 1 tablespoon soy sauce
  • 1-2 tablespoons lime juice
  • 1 tablespoon turmeric
  • 1 tablespoon ground coriander
  • 1 piece of ginger, grated
  • Handful of fresh coriander, chopped
Preparation
Mix soy sauce, honey, turmeric, ground cumin, ground coriander, garlic, ginger and 1 tablespoon vegetable oil in a bowl. Pierce the chicken wings with a knife and rub the mixture on the chicken. Leave it to marinate for at least 2-3 hours, preferably overnight.
To make the sauce, put peanut butter, Thai red curry paste, coconut milk, brown sugar and lime juice in a pan and bring to simmer. Cook for a few minutes while stirring occasionally, until the sauce is thick. Put this sauce in a small dipping bowl and let it cool at room temperature.
Preheat the oven to 200ºC and put the chicken pieces along with the marinate in a roasting tray. Cook for about 30 minutes, turning occasionally until slightly golden and thoroughly cooked.
To check if chicken is cooked, pierce it with a skewer, if the juices are a little pink, it needs to be cooked for about 10 more minutes. If the juices are clear, it means the chicken is cooked. Add chopped coriander to the sauce and serve.

Thai Peanut Chicken

Ingredients
  • 1 tablespoon ginger, chopped
  • 2 tablespoons creamy peanut butter
  • 4 boneless chicken pieces, cut into thin strips
  • 3 tablespoons soy sauce
  • 3 tablespoons garlic, chopped
  • ¾ cup onions, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons white vinegar
  • 2 cups broccoli florets
  • ¼ tablespoon cayenne pepper
  • ¼ cup unsalted roasted peanuts
Preparation
In a bowl, mix peanut butter, vinegar, soy sauce and cayenne pepper and stir till smooth. Heat oil in a skillet and add chicken pieces, garlic and ginger. Cook till chicken is golden brown, reduce heat and add broccoli, peanuts, green onions and the peanut butter mixture.
Add some water and cook for about 5 minutes, stirring constantly, till the broccoli and chicken are cooked. Serve hot with rice.
