How to Make Vanilla Ice Cream

I think the love for ice cream is more inherited than developed! That must be the reason why even a one year old kid literally jumps to eat any flavor of ice cream! And there are so many flavors of ice cream available that one can never get bored of ice cream throughout their life!
If we were to talk about the most popular flavor of ice cream, it is undoubtedly vanilla! Pleasantly surprising, isn't it? It has, in fact, been proven by the International Ice Cream Association that vanilla ice cream is the most loved ice cream since a decade.
Having learned that, let's now learn how to make vanilla ice cream from scratch, with some mouth-watering recipes.

Vanilla Ice Cream Recipe from Scratch

Ingredients
  • 1 bag crushed ice
  • 2 pint-size resealable plastic freezer bags
  • 2 tsp vanilla extract
  • 2 cups heavy whipping cream
  • Gloves or towel
  • 4 cups coarse salt
  • 2 pint-size plastic resealable plastic freezer bags
  • ½ cup white sugar
  • 2 cups half-and-half cream
Process
Take a large measuring cup or a pitcher and add whipping cream, sugar, half-and-half, and vanilla extract to it, stir until sugar dissolves completely. Now pour only ½ of the mixture in a pint size bag, seal it carefully, squeeze out any extra air. Place this bag into another pint sized bag, again being careful to squeeze out extra air.
Take each gallon size bag and fill it half with ice and ½ cup coarse salt. Place this bag into another gallon sized bag, squeeze out air and seal it. Now wear gloves or wrap the bag in a towel and shake the bag until the mixture thickens into ice cream, for about 5 minutes, continuously.
If the mixture hasn't thickened even after 10 minutes of continuous motion, add extra salt and ice to the outer bag. When done, remove the outer pint bag before opening the inner bag to avoid seeping in of the salty mixture.

Vanilla Ice Cream with Peach

Ingredients
  • 2 tbs peach preserves (not jelly)
  • 2 cups half-and-half
  • 1 vanilla bean, split and scraped
  • 1 cup minus 2 tbs sugar
  • 1 cup whipping cream
Process
Take a large saucepan and add all the ingredients in it. Attach a candy or frying thermometer inside the pan, and heat the pan over medium heat, stirring occasionally until the thermometer reaches to 170 degrees F. If you do not have a thermometer, bring the mixture to a simmer, do not boil.
When you see a bubble form, remove from the heat immediately and let cool. Add the vanilla bean to the mixture but remember to remove the hull from the bean.
Pour the mixture into a container with a lid and refrigerate it overnight. The next day freeze the mixture in ice cream freezer according to unit's instruction, the mixture won't freeze so just when the volume increases by ½ to ¾ , refrigerate again, at least for 1 hour, before serving.

Simple Vanilla Ice Cream Recipe

Ingredients
  • 2½ cups white sugar
  • ½ tsp salt
  • 1 cup water
  • 4 eggs
  • 2 tbs vanilla extract
  • 3 cups evaporated milk
  • 6 cups milk
Process
Take a small bowl and beat the eggs into it until frothy. When frothy, add sugar and stir until thickened, also add in salt, evaporated milk, 6 cups milk, water and vanilla. Stir well and pour this mixture into freezer canister of the ice cream maker. Freeze as per the manufacturer's instructions.
