The legs of the crabs stick out of the sushi roll, making it look like a spider; thus, the name spider roll sushi.
Avocado, asparagus, or cucumber, and sometimes, mayonnaise is added to the sushi along with pepper for flavoring.

Spider Roll Sushi Recipe

Ingredients
♨ Short-grain rice, 1½ cups
♨ Soft-shell crabs, cleaned, 4 oz.
♨ Nori (seaweed) sheets, 4
♨ Water, 1½ cups
♨ Green onion, sliced, ½ cup
♨ All-purpose flour, ¼ cup
♨ Avocado, peeled, 1
♨ Sesame seeds, 4 tbsp.
♨ Rice vinegar, 2 tbsp.
♨ Butter, 1 tbsp.
♨ Salt, ¼ tsp.
♨ Black pepper, ¼ tsp.

Method
♨ First, cook the rice. Boil water and rice in a saucepan.
♨ Then let it simmer for 15 minutes. Remove from heat.
♨ Now, add rice vinegar to the cooked rice, and let it rest for half an hour.
♨ Sprinkle salt and pepper over the crabs, and coat them in flour.
♨ Add butter to a nonstick pan, and cook the crabs till golden.
♨ Cut each crab into four pieces, and let the legs remain attached.
♨ Place a sushi mat on the table. Put the nori sheet in the center.
♨ Moist your hands, and pat the cooked rice on the sheet.
♨ Leave a one-inch border on the nori side closest to you.
♨ Arrange the crab pieces and avocado slices on the rice.
♨ The legs of the crab should extend over the nori.
♨ Sprinkle sesame seeds and green onion.
♨ Lift the end of the nori closest to you and fold the sushi.
♨ Roll the entire nori sheet, and use the sushi mat to seal it.
♨ Finally, slice the roll into 8 pieces with a sharp knife.
♨ Serve with spicy eel sauce, wasabi, or soya sauce.
