Ingredients
  • Oats (quick cooking) - 3 cups
  • All-purpose flour - 2 cups
  • Eggs - 2
  • Regular white sugar - 1 cup
  • Brown sugar - 1 cup (packed)
  • Butter (softened) - 1 cup
  • Vanilla essence - 1 teaspoon
  • Baking soda - 1 teaspoon
  • Cinnamon powder - 1½ teaspoon
  • Salt - ½ teaspoon
How to Prepare
Start with combining butter, white sugar and brown sugar. Now, add the eggs, one by one. Beat the eggs with the butter-sugar mixture and add the vanilla. Take another bowl in which you have to add the flour, ground cinnamon and baking soda. The next step is to mix the butter-sugar mixture with the flour mixture.
You may also sieve the flour, baking soda and salt together, before adding them to the butter-sugar mixture. Add oats and combine them well, before placing the mixture in the refrigerator. Make sure that this cookie dough is kept in a container with a tight lid.
After an hour, take out the dough and prepare small balls (walnut-sized) out of it. Place these balls on greased cookie sheets at a distance of two inches. Flatten these balls with a fork or spoon and place the cookie sheet inside the oven that is preheated to 375 degree Fahrenheit.
It will take around eight to ten minutes for the cookies to get baked properly. Over baking is not advisable, if you want the oatmeal cookies to be soft. Let the cookies cool, before removing them from the cookie sheets.

Oatmeal Cookies with Raisins

Ingredients
  • Quick cooking oats - 2 cups
  • Raisins - 1 cup
  • Eggs - 2
  • Sugar - 1 cup
  • All-purpose flour - 2 cups
  • Butter - 1 cup
  • Vanilla extract - 1 teaspoon
  • Water - ¾ cup
  • Ground cinnamon - 1 teaspoon
  • Baking soda - 1 teaspoon
  • Salt - ½ teaspoon
Preparation Method
Rinse the raisins and cook them in water over medium heat, for five minutes. Drain the raisins and keep aside. Now, take a large bowl, in which, you have to cream the butter. Add sugar and combine well, before adding the eggs, one by one.
Beat the mixture, till all the ingredients mix well. Once done, add oats along with raisins, vanilla essence and salt. Now, add flour and baking soda. You may also sift them together, before adding to the mixture.
Once all the ingredients are combined well to form the cookie dough, make small balls (of dough) that have to be placed on a greased cookie sheet (with at least two inches of space in between). Bake the cookies in the oven that is preheated to 375 degree Fahrenheit, for ten minutes.

Oatmeal Cookies Without Eggs

Ingredients
  • Quick cooking oats - 2 cups
  • Softened butter - 2 sticks
  • All-purpose flour - 2 ½ cups
  • Packed brown sugar - 2 cups
  • Raisins - 1 cup
  • Regular sugar - 1 cup
  • Vinegar - 2 tablespoons
  • Water - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Baking soda - 1 teaspoon
  • Baking powder - 3 teaspoons
  • Salt - ¼ teaspoon
Preparation Method
Take a large bowl and cream butter, along with sugar. Add the eggs one by one to the bowl and beat them with the butter. Add vanilla extract, vinegar and water to this mixture, combine well and keep aside.

Now, mix baking powder, baking soda, salt and flour and sift the mixture once or twice. The next step is to add the flour to the butter-sugar mixture.
Mix well, before adding oats and raisins (rolled in flour). Combine them to form the cookie dough that has to be rolled into small balls. Now, place these balls on a greased cookie sheet at a distance of two inches in between. Now, bake them for around ten minutes, in the oven that is preheated to 375 degree Fahrenheit. Let the cookies get cool for at least five to ten minutes, before use.
