How to Make Fajitas on the Stove

Ingredients
  • Lettuce
  • 2 tbs salsa or hot sauce
  • 2 onions
  • 2 large bell peppers
  • 4 tortillas
  • 3 lbs chicken
  • Shredded cheese
  • 1 tomato
  • 3 packages fajitas seasoning
Process
Cut the chicken breasts into halves then cut each half into ¼ inch strips, place in a big bowl. In another bowl mix fajitas seasoning according to the package directions, pour it over chicken, mix well and refrigerate until needed. If you wish to have a tangy flavor, apply 2 tsp lemon juice to the chicken.
Peel only one onion and cut the ends. Cut this onion into triangular sections, you will get strips after you take the onion apart, set aside. Cut the peppers in half and set it aside along with the onions. Dice the other onion into small pieces along with tomato and lettuce, set them aside. Place a large skillet on the stove top, over medium heat.
Place chicken in the skillet along with onions, salsa and bell peppers. Place a meat thermometer in the thickest part of the meat. Cook until the internal temperature reaches 160 and peppers and onions are tender. Now heat tortillas in the microwave for about 30-40 seconds.
When the tortillas are done, place a single tortilla on a plate, stuff it with chicken followed by lettuce mixture and sprinkle the shredded cheese on the top, roll it up. Repeat the same procedure with the remaining tortillas.

How to Make Fajitas in the Oven

Ingredients
  • 1 yellow squash, halved and sliced into strips
  • 2 tbs vegetable oil
  • 1 red onion, thinly sliced
  • 1 tsp minced garlic
  • 1 red bell pepper, seeded and sliced into strips
  • ¼ cup chopped fresh cilantro
  • 8 (8 inch) flour tortillas
  • 1 green bell pepper, seeded and sliced into strips
  • 1 cup shredded Monterey Jack cheese
  • ½ cup salsa
  • 1 tsp ground cumin
  • ½ tsp salt
Process
First wrap the tortillas in aluminum foil and place it in the oven, bake for about 15 minutes at 350 degrees C. Keep the tortillas warm until needed. Heat oil in a 10 inch skillet over medium high heat. Add garlic, red and green peppers and onions and stir once to coat with oil. Cook covered for 5 minutes over medium heat. Now stir in squash, salsa, cumin and salt and cook for additional 5 minutes. Fill this mixture in the center of each tortilla, sprinkle cheese and cilantro. Roll up the tortillas and serve immediately.

How to Make Fajita Sauce

Ingredients
  • ½ tsp allspice
  • ¼ cup cilantro, chopped
  • 3 tbs balsamic vinegar
  • 2 tbs Dijon mustard
  • ½ cup lime juice
  • ½ cup honey
  • 4 garlic cloves, minced
  • 1 tsp cumin
  • 2 tbs Chipolte peppers in Adobo
Process
Add all the ingredients to a food processor and blend well. Store in squirt bottle. This is one of the easiest recipes for fajita sauce. You can store this sauce, however, it is better to utilize within a week before it loses its taste.
