How to Make Caramel

While making caramel you have to burn the sugar till it turns rustic brown. It is a very simple process and includes only two ingredients, water and sugar. But there can be other ingredients depending on your choice of altering the taste of the caramel.
The reason is that it is one of the most well-known dessert toppings, it is easy to make, is delicious and can be reused for a number of times. You can also add the caramel into many other preparations like sauces and gravies to add that rustic sweetness. The best example of such a dessert is caramel apples.

How Do You Make Caramel?

Making caramel is a very easy process as you simply have to mix the ingredients and heat them till they blend into each other. There are two ways of making basic caramel, either make it separately and then pour it on the desired dish, or use a caramel torch to burn the sugar on the dessert itself. You can also prepare some yummy caramel frosting with the help of these methods.

Caramel Recipe

Ingredients
  • 175 gm castor sugar
  • 2 tablespoons water
Directions
To make caramel, you will need the above ingredients, an aluminum vessel and a wooden spoon. Heat the vessel on low heat and add the sugar in it. The sugar melts at about 338 degrees F, and the sides of the vessel is where it melts first.
Thus, make sure you observe it very carefully. Stir it with the spoon when it starts melting, and make sure it doesn't burn. After 5 minutes the sugar turns into a brown liquid, after which you have to remove from the vessel from heat and add water. Stir it well and then place it again on heat to blend the mixture well.

Caramel Sauce

Ingredients
  • 1 cup Sugar
  • 2 tablespoons corn syrup
  • 2 tablespoons water
  • 1 cup heavy cream
Directions
In an aluminum pot, add sugar, water and syrup and place it on medium heat. Whisk the mixture while heating so that the sugar dissolves. Once it starts boiling, it will turn slightly brown in color. At this stage, reduce heat and add cream while stirring the mixture.
Heat it for another 5 minutes, till the sauce becomes thick and rich. Turn off the heat. This sauce will definitely be of great help in making dishes like caramel popcorn.

Caramel Custard

Ingredients
  • ½ cup sugar for caramel
  • 1/3 cup sugar for custard
  • 2½ cups warm milk
  • 1 tsp Vanilla
  • 3 eggs
Directions
Prepare the caramel by heating the ½ cup sugar on low heat, whisking it till it melts to brown color. In custard bowls, pour this caramel when hot and cover the bowls so that the caramel base hardens. For the custard recipe, mix eggs, sugar and vanilla in a bowl.
Pour the milk and stir the ingredients well till they all blend. Then pour this mixture in the custard bowls, and place them in the baking dish.
Bake them in a preheated oven at 350 degrees F for about 40 minutes and then remove the bowls. Refrigerate these bowls overnight. Before serving them, scrape the sides gently with a knife and place the bowls upside down on a plate. You will get a lovely caramel topped custard on your plate. If the caramel is too hard, use a caramel torch to melt the top so that the caramel flows down the custard. This is very similar to a creme brulee cheesecake.
