Homemade Barbecue Sauce
Ingredients
Onion (finely chopped), 3
Garlic Cloves (chopped), 12
Red Wine Vinegar, ½ cup
Brown Sugar, 1 cup
Olive Oil, 2 cups
Bacon Fat, 1 cup
Jalapeños (seeded and chopped), 2
Red Bell Peppers (seeded and chopped), 2
Chilies, 2
Cayenne Pepper, ½ teaspoon
Chili Powder, 6 tablespoons
Tomato Juice, 1 cup
Tomato Puree, 1 cup
Mustard, 2 tablespoons
Worcestershire Sauce, 2 tablespoons
Ketchup, 8 oz
Molasses, ½ cup
Oregano, 4 teaspoons
Lime Juice, 4 oz
Method
In a saucepan, melt bacon fat.
Add olive oil to it and boil it over medium heat.
Add onion, jalapeños, peppers, cayenne, chili powder, and oregano; sauté for about 8 minutes till the ingredients are softened.
Apart from the lime juice, add the rest of the ingredients and let it simmer for 5 to 7 minutes.
Finally, add lime juice.
Sauce with Ketchup
Ingredients
Vegetable Oil, 2 tablespoons
Onion (finely chopped), 1
Garlic Cloves (minced), 3
Tomato Ketchup, 1½ cups
Cider Vinegar, ½ cup
Worcestershire Sauce, ¼ cup
Chili Powder, 1 tablespoon
Sugar, ¼ cup
Cayenne Pepper, ½ teaspoon
Method
Warm oil over medium heat in a saucepan. Add onion and garlic, and let the mixture sauté for about 5 minutes.
Now add the ketchup, vinegar, Worcestershire sauce, sugar, chili powder, and cayenne pepper.
Stir all the ingredients well, reduce the heat, and let the sauce simmer.
Cover the sauce and let it thicken. This will take about 20 minutes.
You will notice that the sauce has reduced to 2½ cups when ready.
Sauce for Meatballs
For the recipe, you'll require baked meatballs. Pour the homemade sauce over the meatballs and return it to the oven for about 30 minutes.

Pureed Tomatoes, ¾ cup
Beef Stock, ½ cup
Steak Sauce, ¼ cup
Worcestershire Sauce, ½ cup
Vinegar, 2 tablespoons
Instant Coffee, 2 tablespoons
Brown Sugar, ½ cup
Lemon Juice, ¼ cup
Method
In a saucepan, heat oil over medium heat and add onions to it.
When the onions start to turn slightly brown, add the rest of the ingredients and bring to a boil.
Reduce the heat to low and let the sauce simmer for about 10 minutes.
