Turkey Breast with Garlic and Thyme

Ingredients
  • 1 boneless turkey breast, cut in half
  • 2 onions (finely chopped)
  • 6-7 baby carrots (trimmed and cleaned)
  • 5 garlic cloves (minced)
  • 1 can chicken stock
  • 3 celery stalks (chopped)
  • 1 tablespoon dried thyme
  • ½ cup white wine
  • ½ teaspoon allspice
  • ¼ teaspoon pepper
  • 1 teaspoon salt
Method
Lightly coat the bottom of a Crock Pot with olive oil. Place the onions, garlic, baby carrots, and celery at the bottom of it in a single layer. Place the turkey breast over the vegetables.
In a bowl, combine the chicken stock with the white wine, dried thyme, allspice, salt and pepper. Pour this mixture over the turkey and vegetables, and cover the Crock Pot with a tight lid. Cook the mixture for around 6 to 7 hours, and check if the turkey breast is tender before serving.

Provencal Turkey Breast

Ingredients
  • 1 whole turkey breast
  • 1 tablespoon dried thyme
  • 1 sprig basil
  • 1 teaspoon dried fennel
  • ¾ cup dry white wine
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 2 cups turkey stock
  • 2 garlic cloves (minced)
  • ½ teaspoon salt
  • 12 garlic cloves (unpeeled)
Method
Make a small incision with a sharp knife at the bottom of the turkey breast, and then push a finger inside the skin to loosen it from the meat. Do this gently, otherwise you might tear the turkey skin. Combine the dried thyme, basil, fennel, minced garlic, pepper and ½ a tsp. of salt in a small bowl, and rub this mixture under and over the turkey skin.
Add a bit of olive oil over the meat, and place it in a Crock Pot along with the unpeeled garlic cloves. Cook the turkey for about 4 to 5 hours, and then remove it from the Crock Pot. Let the cooked meat rest for about 15 minutes; then gently remove the skin and discard it, place the turkey breast in a plate and keep it warm.
In the meantime, squeeze the garlic pulp into the Crock Pot. Add the turkey stock and white wine, and cook for about 20 minutes until the sauce thickens in consistency. Pour the sauce over the turkey breast before serving.
