How to Cook Mahi Mahi

There is no one in this world who does not love seafood (why should I be an exception?). The other day, while dining at a seafood restaurant with my family, I came across an interesting Mahi Mahi dish. Wanting to experiment it, I ordered and believe me this was the most fantastic fish recipe that I had ever tried.
I also had a piece of luck, the chef there revealed to me the secret to prepare Mahi Mahi, which I'm going to share with you all. You can cook fresh as well as frozen Mahi Mahi in a number of delectable ways. However, if you are cooking frozen Mahi Mahi, then allow the fish to return to room temperature or you can even thaw it in warm water.

Cooking Mahi Mahi in the Oven

Ingredients
  • Skinless Mahi Mahi fillets, 6 to 8
  • Fresh bay leaves, 2 to 3
  • Dry vermouth, ½ cup
  • Freshly squeezed lemon juice, ¼ cup
  • Fresh parsley, 10 sprigs
  • Garlic cloves, smashed, 10 to 12
  • Extra virgin olive oil, 5 tablespoons
  • Fresh thyme, 5 sprigs
  • Freshly ground black pepper, 2 teaspoons
  • Cherry red tomatoes, for garnish, 12
  • Kosher salt, 1 teaspoon
Cooking Instructions
Before cooking Mahi Mahi fillets in the oven, preheat the oven to about 425 ºF. In a baking dish, place the parsley sprigs, bay leaves and thyme sprigs so as to create a bed. Place the fish on this seasoned (with kosher salt and pepper) fish on top of the herb bed and spread the smashed garlic.
Pour the vermouth wine and two tablespoons of olive oil and cover the dish with an aluminum foil.
Bake it for about 15 minutes in the oven till the flesh turns opaque. Remove the baking dish from the oven and strain the pan juice into a saucepan. Place this pan on high heat and pout the lemon juice and remaining olive oil and bring the mixture to a boil. Place the fish with the herbs on a serving dish and pour the sauce on top. Garnish this dish with cherry red tomatoes before you indulge.

Grillied Mahi Mahi Recipe

Ingredients
  • Mahi Mahi fillets, 8 to 10
  • Diced tomatoes with green chili peppers, 1½ cans
  • Large sized onion, diced, 1
  • Fresh ginger, grated, 1 tablespoon
  • Bottled minced garlic, ¾ jar
  • Olive oil, ¼ cup
  • Freshly squeezed lemon juice, ½ cup
  • Pepperjack cheese, shredded, ¼ cup
  • Fresh cilantro, finely chopped, 3 tablespoons
  • Dry white wine, ½ cup
  • Butter, ½ cup
  • Freshly ground black pepper, 2 teaspoons
  • Salt to taste
Cooking Instructions
Season the Mahi Mahi fillets with salt, 2 tablespoons minced garlic, grated ginger and pepper and set it aside for about an hour. Cover a pan with aluminum foil and coat it with butter, evenly on all sides. Place the fish fillets and pour the wine and lemon juice on top.
Now transfer the diced onions, tomatoes with chili peppers into the pan and cover it. Place this pan on a grill grate and cook it for about forty minutes till the fish is thoroughly cooked.
Remove the pan from the grill and sprinkle the cheese on top of the fish when it is hot and enjoy it with a dipping sauce of your choice. This is surely the best way to cook Mahi Mahi, as grilling enhances the flavor of the fish.

Pan-fried Mahi Mahi Recipe

Ingredients
  • Mahi Mahi fillets, 6 to 8
  • Habanero peppers, seeded, 2
  • Shallots, diced, 2
  • Plain bread crumbs, ½ cup
  • Chicken stock, 4 cups
  • Macadamia nuts, ¼ cup
  • Pineapple, roughly chopped, ¼ cup
  • Shredded coconut, 2 tablespoons
  • Butter, 5 tablespoons
  • Mango, roughly chopped, ¼ cup
  • Sugar (optional), ½ teaspoon
  • Papaya, roughly chopped, ¼ cup
  • Freshly ground black pepper, 2 teaspoons
  • Salt to taste
Cooking Instructions
Crush the macadamia nuts and bread crumbs in a food processor till they are finely ground. Transfer the mixture to a plate and coat the Mahi Mahi fillets in this nut mixture evenly on both sides. Take a large skillet and melt the butter. Fry the fish in the butter over medium heat till they are browned on both sides.
Remove them from the skillet and fry the shallots in the same skillet, till they become translucent. Add the chopped mango, papaya, pineapple, habanero peppers and shredded coconut to the skillet and stir them till they are cooked.
Now pour the chicken stock in the skillet and add the pepper and salt to taste. You can add sugar if you require. Allow the soup mixture till it thickens a bit. Strain the soup into a separate saucepan, while retaining the contents in the skillet. Lightly boil the sauce over low flame for about 5 minutes.
Bake the Mahi Mahi in a preheated oven at 190 ºC for about 10 minutes. Remove the fish from the oven and place it in a dish. Transfer the shallots, fruits and habanero peppers to the dish.
These were some fabulous ways for cooking Mahi Mahi. If you are wondering how long to cook Mahi Mahi, then it takes approximately ten to fifteen minutes for the flesh to cook.
