Salmon is rich in omega 3 fatty acids, niacin, and selenium and is also low in calories. It has a very distinctive and delicate flavor and many people ruin it by smothering it in too many herbs and spices or overcooking it. Salmon should never be overcooked as it becomes very dry and flavorless.
You can cook salmon in numerous ways, be it pan frying, grilling, baking, or steaming. But, the best way to cook a salmon is by broiling as this method of cooking retains its delicate texture and buttery flavor.

Broiling Salmon in Oven

Preheat the oven to 220°C and line a baking tray with aluminum foil. Prepare the fish by sprinkling it with salt and freshly ground pepper. Brush a little olive oil or butter on the salmon fillets and also the aluminum foil. Place the salmon fillets on the baking tray and put this inside the oven and grill for 4 to 5 minutes.
Once the salmon has turned a little golden brown, gently flip the fillet and cook on the other side. After 4 to 5 minutes, check if it is done. When it is cooked on both sides, remove the baking tray from the oven and transfer the fillets on a platter. Cover the platter with cling film and let the fish rest for 5 to 6 minutes. Resting the oven-baked salmon is very important, as it allows the residual heat to further cook and make it more tender and succulent.

Broiled Salmon with Lime Butter

Ingredients
  • Salmon fillets, 4
  • Butter, 3 tbsp.
  • Juice of 1 lime
  • Lime zest, 2 tbsp.
  • Sea salt, 1½ tsp.
  • Black pepper, 2 tsp. (freshly ground)
  • Parsley, 2 tbsp. (chopped)
Method

In a small pan, melt the butter in a low flame. Add the lime zest and juice and mix it thoroughly. Keep this lime butter aside.

In a roasting tin, place the salmon fillets, skin side down and sprinkle with sea salt and freshly ground pepper.
Now pour the melted butter infused with lime zest and juice over the salmon fillets and bake in a moderately-hot oven for 6 to 7 minutes till the skin of the salmon has turned golden. Remove the salmon fillets from the oven and serve with a sprinkling of chopped parsley.

Salmon with Wasabi Sauce

Ingredients
  • Salmon steaks, 4
  • Ginger, 1 inch (finely sliced)
  • Wasabi sauce, 1 tsp.
  • Vegetable oil, 2 tbsp.
  • Dark soy sauce, 2 tbsp.
  • Sesame oil ½ tsp.
Method

In a zip lock plastic bag, add the wasabi paste, sesame oil, sliced ginger, and soy sauce to make a marinade. Add the salmon steaks and marinade this for about 10 minutes.

Heat a non-stick pan and add the vegetable oil. Remove the salmon steak from the marinade and place the fish on the pan skin side down.
Cook for 4 to 5 minutes till the skin has turned crisp and brown, now add the wasabi and soy sauce marinade and cook for another 2 to 3 minutes.
Gently turn the fish over and cook on the other side till the steaks are done. Basting the salmon with the marinade helps in sealing in the juices and makes the salmon more flavorful. Broiled salmon can be served with steamed vegetables like asparagus and broccoli or rice. The most important thing to remember is to not overcook it.
