Making Pancakes from Scratch

Ingredients
  • 1 cup flour
  • 1 egg
  • 3 tablespoons melted butter
  • 1 cup buttermilk
  • 1 tablespoon sugar
  • 1 pinch salt (for taste)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
Directions for Preparation
Take a large mixing bowl and combine together the ingredients - flour, sugar, salt, baking powder and baking soda. Add buttermilk and egg to the flour concoction. Whisk the mixture by using a large fork, till you get a smooth paste. To this, add buttermilk and stir again to blend well the batter.
Turn on the burner (maintain medium heat) and preheat a non-stick skillet. Measuring ¼ cup amount, pour pancake batter into the hot pan. Cook till the lower side turns golden brown and then, flip to the other side. Remove them from the pan when the other side is done. To make your homemade pancakes more crunchy, place them in the oven (at 275 °F) for 5 minutes.

Making Pancakes without Egg

Ingredients
  • 1 cup whole wheat flour
  • 1 cup buttermilk
  • 2 tablespoons brown sugar (or jaggery)
  • 2 teaspoons cooking oil
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon powder
Directions for Preparation
In a mixing bowl, combine together whole wheat flour, brown sugar, baking soda and cinnamon powder. To this, add buttermilk and make a smooth batter. Whisk till the batter is consistently thick and there are no lumps. If you stick to the above mentioned quantities of ingredients, you will get a batter thick enough to pour easily.
Allow the batter to leaven for 15 minutes. By the meantime, heat a griddle over medium high heat. Pour a full ladle on the hot griddle, cook the first side till you notice bubble formation on the upper side. Flip after 1-2 minutes and cook the remaining side. Serve these eggless pancakes with jam or honey.

Making Pancakes without Milk

Ingredients
  • 2 cups all-purpose flour
  • 1 egg
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ cup club soda
  • ¼ teaspoon salt
  • Butter and maple syrup (optional)
Directions for Preparation
In a large bowl, mix together flour, baking powder, baking soda and salt. Take another smaller bowl, where you can combine liquid ingredients - egg and club soda. Mix them well and keep aside. Now, stir in this liquid mixture into the flour concoction. Combine together the flour mixture and egg mixture.
Heat a griddle or frying pan over medium high heat. With a tablespoon or ladle, scoop batter onto the hot griddle. Cook pancakes for 1-2 minutes till the first side is done. Then, flip to the other side and cook for another 1-2 minutes. Repeat the same cooking steps for the remaining pancakes and serve hot with butter and maple syrup.
