Pina Colada
Ingredients
Whole Milk, 3 cups
Instant Coconut Cream Pudding, 1 packet
Pineapple, 8 oz.
Rum Flavoring, 1 tsp.
Vanilla Extract, 1 tsp.
Directions
Add all the ingredients in a mixing bowl and mix them on medium speed, until the mixture gets evenly blended.
Pour the mixture in the freezer and chill it for 1 hour or until it becomes firm.
Almond
Ingredients
Almonds, ¼ lb. (blanched and dried)
Sugar, ⅔ cup
Vanilla Extract, 1 tsp.
Water, 1 pint
Salt, to taste
Directions
In a food chopper grind the almonds into a fine grainy paste.
Mix the paste with salt and water.
Cook this in a double boiler till it becomes creamy.
Cool the paste and add sugar, and vanilla extract.
Freeze the mixture.
Blueberry
Ingredients
Blueberries, 2 pints
Sugar, 1½ cups
Orange Juice, 3 tbsp.
Light Cream, 4 cups
Vanilla Extract, 1 tsp.
Directions
In a saucepan, mix blueberries, sugar, and orange juice. Mash the berries slightly and cook them over a medium flame, stirring occasionally till the mixture starts boiling. Simmer the mixture for 5 minutes and then turn off the heat.
Blend the mixture in a food processor and then push it through a strainer using the back of a wooden spoon. Let the mixture cool for sometime.
Mix the blueberry mixture with cream and vanilla extract. Freeze until it becomes firm.
Maple
Ingredients
Maple Syrup, 1 cup
Egg Yolk, 6
Whole Milk, 1 cup
Heavy Cream, 1½ cups
Cornstarch, 1 tbsp.
Vanilla Extract, ½ tsp.
Walnuts, ½ cup (coarsely chopped)
Directions
Add the cream in a heavy bottom saucepan and heat till it starts simmering.
Whisk the maple syrup, cornstarch, and egg yolks together.
Add this mixture, to the hot cream and boil until it thickens a little.
Strain the mixture into a large bowl.
Cool the mixture a little and whisk in the milk and vanilla.
Chill the mixture thoroughly before freezing.
Add the walnuts or pecans towards the end.
Cookie Pie
Ingredients
Chocolate Filled Sandwich Cookies, 100
Butter, 3 tbsp.
Raspberry Ice Cream, ½ gallon
Hot Fudge, ½ cup
Fresh Raspberries
Directions
Finely crush the cookies.
Combine them with butter and mix it properly.
Press the mixture onto the bottom of a 9 inch pie plate.
Stand the cookies up around the edges and press it lightly into the crust.
Freeze the pie plate for an hour.
Spread half the raspberry ice cream over the crushed cookies.
Cover this layer with a quarter of the fudge.
Freeze the pie plate for an hour again.
Spread the remaining fudge over the ice cream and let it freeze overnight.
Garnish it with fresh raspberries.
Let the pie stand in room temperature for 15 minutes before cutting.
