Basic Recipe

Ingredients
  • 2 cups, heavy cream
  • ¼ teaspoon, salt (Optional)
Equipment
  • 1 large dish/bowl
  • Electric whisk/electric blender/food processor
  • Muslin/cheese cloth
  • Container to store the butter
Procedure
  • Allow the heavy cream to sit outside for a while till it reaches a temperature of about 50 ºF-60 ºF.
  • Pour the cream into the large bowl. Use an electric whisk and start whisking it.
  • Watch the stages it goes through. First, it will start looking like whipped cream. Continue blending it.
  • Slowly, you will see the butter separating from the cream. It will have an appearance like cottage cheese.
  • Finally, what you will have left is butter and buttermilk.
  • Once this has been achieved, place a muslin cloth or cheese cloth over another dish or jar. Pour out the contents of the blender into the cloth. This is to separate the butter from the buttermilk.
  • After all the buttermilk has been separated, use a ladle, or simply wrap the butter in the cloth and squeeze it to remove any excess fluid that has remained. This is an important step, as any trace of buttermilk may cause the butter to turn sour quickly. You can also rinse the butter under running water, to remove excess buttermilk.
  • If you wish to add salt to the butter, add it now, and mix it thoroughly.
  • Place the butter in an airtight container to shape it, and refrigerate.
