Everyone loves to bite into juicy fajitas that are made from beef and an assortment of vegetables. This local Mexican delight can also be made out of pork, lamb, chicken and vegetables. Easily prepared at home and teamed with salsa, sour cream or guacamole, they make an excellent lunch or dinner dish. Here are some delicious recipes for grilled steak fajitas which are as delightful to cook as eating.

Simple Grilled Steak Fajita Recipe

Ingredients Required
  • Beef flank steak, 1½ pounds, 1
  • Flour tortillas, warmed, 12
  • Large onion, cut into wedges, 1
  • Medium-sized avocado, peeled and sliced, 1
  • Medium-sized green pepper, julienned, 1
  • Garlic cloves, minced, 5 to 6
  • Lemon juice, 1 cup
  • Worcestershire sauce, 1 tablespoon
  • Vegetable oil, ½ cup
  • Dried oregano, 1½ teaspoons
  • Sour cream, ¼ cup
  • Chopped green chilies, 1 can
  • Cider vinegar, ½ cup
  • Freshly ground black pepper, 1 teaspoon
  • Salt to taste
Instructions for Preparation
Chop the onion, green pepper and place them in a resealable plastic bag. Clean the beef steak and place it in another bag. For the marinade, take a medium-sized bowl and pour the lemon juice in it. Now add the Worcestershire sauce, vinegar, chilies, minced garlic, vegetable oil, oregano, pepper and salt to the lemon juice.
Using a spoon combine all the ingredients thoroughly and pour them equally in both the bags, containing the beef steak and chopped vegetables. Allow this mixture to marinate in the refrigerator, preferably overnight for maximum taste. Remove the steak and vegetables from the bags after draining them of marinade.
Place the marinated steak over the grill and cook for about 15 minutes, rotating it till all the sides are evenly cooked. Wrap the tortillas in a foil and frill it. Place the vegetables in another foil and seal it tightly. In the same manner, heat the vegetables by placing it over indirect heat.
Once the steak has cooked, remove it from the heat and cut it into slices. Unwrap the foils and place the tortillas on a plate. Top it with the steak and cooked vegetables. You can serve this delicious grilled steak fajitas with avocado and sour cream.

Sweet and Spicy Grilled Steak Fajita and Vegetables

Ingredients Required
  • Beef flank steak, 1 pound
  • Flour tortillas, 12
  • Beans, chopped, ½ cup
  • Large onion, cut into rings, 1
  • Green bell peppers, cut in long stripes, 2
  • Medium-sized carrots, thinly sliced, 2
  • Garlic cloves, minced, 5 to 6
  • Freshly squeezed lime juice, 1 cup
  • Italian dressing, ½ cup
  • Light brown sugar, 2 tablespoons
  • Ground coriander, ¼ teaspoon
  • Freshly ground black pepper, 2 teaspoons
  • Salt to taste
Instructions for Preparation
For the marinade, take a medium-sized bowl and pour the lemon juice. To the juice, add the Italian seasoning, coriander, black pepper, sugar, garlic and salt. Blend the ingredients together and pour them over the steak. Coat the steak with this marinade and place the bowl overnight in a refrigerator.
Chop the onions, carrots, beans and green bell peppers and char them on the grill for about 10 minutes. Remove the steak from the marinade and cook it on the grill for about 5 minutes till it becomes tender. Wrap the tortillas in a foil and heat them for a couple of minutes. Place the tortillas on a plate and place the steak.
Transfer the vegetables on the steak and garnish with finely chopped cilantro. Enjoy this fajita with Mexican rice, guacamole or sour cream.

Grilled Marinated Skirt Steak Fajita Recipe

Ingredients Required
  • Beef skirt steak, 1 pound
  • Flour tortillas, 12
  • Assorted colored bell peppers, thinly sliced, 3
  • Fresh lime juice, ½ cup
  • Olive oil, 2 tablespoons
  • Large red onion or sweet onion, thinly sliced, 2
  • Fresh cilantro sprigs, minced, ¼ cup
  • Garlic cloves, minced, 6 to 8
  • Ground cumin, 1½ teaspoons
  • Salt to taste
Instructions for Preparation
Trim the skirt steak and cut them into large pieces and keep aside. Chop the peppers and onion on a cutting board into thin slices. Take a large-sized bowl and combine together the lime juice, cumin powder and olive oil. Mince the garlic cloves with salt and add it to the bowl.
Transfer the cut steak, onion and peppers to the marinade and place the bowl in the refrigerator. Allow this mixture to marinate overnight for a more pronounced flavor. Cook the steak in the grill till it is done. In the same grill warm the tortillas and transfer them to a plate.
Take a skillet and heat some oil in it. Saute the vegetables for about two minutes. Now top the tortillas with the cooked vegetables and steak and serve it with salsa, sour cream or guacamole.
