French Toast Recipes with a Twist

While regular white bread is a common feature in a French toast recipe, using rye bread (black bread) is a better alternative. Why? Because it is dense, and can saturate a generous amount of the mixture prior to being fried, without falling apart too.
The French use stale bread because it doesn't fall to pieces like fresh bread, during cooking. If you still want to go with white bread, pop it into a toaster before using it.

Basic Ingredients
  • 2 eggs
  • ½ a teaspoon of cinnamon powder
  • ½ a cup of full-fat milk
  • 1 tablespoon of whole cream
  • 2 pinches of salt
  • 2 tablespoons of unsalted softened butter
  • 2 slices of rye bread
  • 1 teaspoon of vegetable oil

Preparation

Step 1
Take a big bowl and dump into this the eggs, cinnamon, milk, cream, and salt, whisking them with an electric mixer or manually, until a smooth texture is acquired.
Step 2:
Drop into a warm frying pan the butter and vegetable oil (to avoid the butter from burning), stirring briefly with a wooden spoon.

Step 3:
Take one slice of the rye bread, drop it into the egg mix and flip it about for a few seconds, making sure that the entire slice is well coated. Carefully place the slice in the awaiting hot pan.
Step 4:
Using a pair of tongs or food turner, flip the rye bread on its other side after 40 seconds; fry it for an additional 30 seconds. Repeat step 3 and 4 for the second bread slice.
Step 5: Place the slices on a paper towel to let it soak up the excess oiliness. You can eat it with anything that you'd like from the list of accompaniments, combining two or more ingredients for an interesting combination of flavors and textures.
