Fluffy Pancake Recipes from Scratch

When it comes to a wholesome, fulfilling breakfast, nothing fits the bill better than a batch of light and fluffy pancakes. Prepared from basic ingredients, they can be as delicious as you want them to be, by adding different ingredients to enhance their flavor.
Instead of using a ready-made pancake mix, why not try preparing delicious fluffy pancakes yourself? A lot of different ingredients go into preparing such pancakes, like buttermilk and vinegar. In fact, you can even prepare light and fluffy vegan pancakes. Given are a few recipes for some light, soft and fluffy delicious pancakes.

Buttermilk Pancake Recipe - 8 Pancakes

Ingredients
  • All-Purpose Flour, 1¼ cup
  • Buttermilk, 1⅓ cup
  • Baking Powder, ½ tsp
  • Baking Soda, ¼ tsp
  • Egg, 1, beaten
  • Granulated Sugar, 2 tbsp
  • Salt, ½ tsp
  • Vanilla, ½ tsp
  • Cooking Oil, 1 tbsp
  • Sliced Strawberries/Blueberries/Peaches (Optional)
Instructions

Take a large bowl, and add in it sifted flour, baking powder and soda, salt, and sugar. In another bowl, mix the buttermilk, oil, egg, and vanilla. Pour this mixture of the second bowl in the first one and stir continuously to avoid lump formation. Ensure that the entire mixture is well-blended.
Now is the time to add the fruit of your choice, be it blueberry, strawberry, or peaches. If the mixture appears watery, allow it to rest for about ten minutes before you start making them. Take a skillet and grease it lightly with either some butter or cooking spray.
Pour ¼ cup of the batter in the skillet (this will make about a 4 inch thick pancake), and allow it to cook till it turns golden brown. The top surface meanwhile should bubble, and it should begin to leave the skillet on its own. Turn it over, and allow the other surface to cook until golden brown. Pour your favorite maple syrup on these pancakes and enjoy.

Pancake Recipe with Vinegar - 8 Pancakes

Ingredients
  • All-Purpose Flour, 2 cups
  • Milk, 1½ cups
  • Vinegar, ¼ cup
  • Baking Powder, 1 tbsp
  • Baking Soda, ½ tsp
  • Granulated Sugar, 2 tbsp
  • Eggs, 2
  • Vanilla, 2 tsp
  • Vegetable Oil, ¼ cup

To prepare this pancake, take a large bowl and put all the dry ingredients in it, i.e, all-purpose flour, baking powder, baking soda, and sugar. In another bowl, combine, the vinegar, milk, eggs, oil, and vanilla. Now, blend the entire mixture thoroughly.
Pour it into the bowl with the dry ingredients, and use a hand mixer to blend all of them till it is smooth. Allow the batter to rest for about five minutes, as this enables the combination of vinegar with the baking soda to make the pancakes fluffy. Take a skillet, and grease it lightly with either cooking spray or butter.
Once it is heated well, pour about ⅓ cup of the batter into the skillet, and allow it to cook till it turns golden brown. The top surface meanwhile should bubble, and the pancake should begin to leave the skillet on its own. Turn it over, and allow the other surface to cook until golden brown. Now, pour your favorite syrup on the pancakes and enjoy.

Vegan Pancake Recipe - 6 Pancakes

Ingredients
  • All-Purpose Flour, 1 cup
  • Soy Milk, 1 cup
  • Sugar, 1 tbsp
  • Salt, ⅛ tsp
  • Baking Powder, 2 tbsp
  • Vegetable Oil, 2 tablespoons

In a large bowl, combine together the flour, sugar, baking powder, and salt. Pour the soy milk and oil to this mix while stirring the batter continuously, until the blend is entirely smooth. Now, allow the batter to rest for about 5-10 minutes.
Heat a large skillet greased with butter, and pour ⅓ of the batter into it, and allow it to cook till it turns golden brown. The top surface meanwhile should bubble, and the pancake should begin to leave the skillet on its own. Turn it over, and allow the other surface to cook until golden brown. Pour your favorite maple syrup on these pancakes and enjoy.
In any of the aforementioned recipes, you can add interesting ingredients to make them even more tastier.
Try adding a dash of cinnamon and nutmeg, some chopped walnuts, chocolate chips, or pieces of fresh fruits. These are bound to add  to the flavor and nutritional value of the pancakes.
