Flaxseeds are slightly bigger than sesame seeds and have a smooth, shiny hard shell. Their color varies from deep amber to reddish brown. They're high in omega-3 fatty acid and fiber, making them a necessary diet supplement. Since flaxseeds are low in carbohydrates, they help in controlling blood pressure, blood triglyceride, and LDL cholesterol levels, in the body.
Focaccia-Style Flax Bread
Ingredients
2 cups flaxseed meal
5 eggs, beaten
1-2 tbsp. artificial sweetener
1 tbsp. baking powder
⅓ cup oil
1 tsp. salt
½ cup water
Directions
Place an oiled parchment paper or a silicone mat on a pan. Mix all the dry ingredients―flaxseed meal, artificial sweetener, baking powder, and salt―in a bowl. Add the eggs, oil, and water, to this mixture. Allow the batter to set for 2-3 minutes till it thickens, slightly. Pour the batter into the pan and spread it out to get an even thickness.
Place the pan in a 350 °F preheated oven for 18-20 minutes, or wait till the bread browns. Allow it to cool and then slice it before serving.
Flaxseed Crackers
Ingredients
1½ cups all-purpose flour
4 tsp. margarine (alternative: butter), softened
¼ cup Pizzey's Premium Organic Milled Golden Flaxseed
¼ cup Pizzey's Premium Organic Whole Golden Flaxseed
½ tsp. salt
½ tsp. baking powder
½ cup skimmed milk
Directions
To a large bowl, add the flour, whole flaxseed, milled flaxseed, margarine, baking powder, and salt. Using a stand mixer, blend these dry ingredients till they resemble coarse meal. Pour the milk into this and knead the dough.
Cover it with a plastic wrap and place it in the refrigerator for 10 minutes. Roll the dough and divide it into equal-sized quarters. Sprinkle some flour on a cutting board and roll the dough quarters into thin 1/16-inch rectangles, over its surface.
Then, cut them into 2½-inch squares. Transfer these squares to a baking sheet and place it in a 325 °F preheated oven for 20 minutes, or until they turn crisp and golden in color.
Apple Flax Muffins
Ingredients
1¼ cups flaxseed meal
Artificial sweetener (equal to ¾ cup sugar)
2 tsp. baking powder
1 tsp. nutmeg
4 large eggs, beaten
1 tbsp. cinnamon
¼ cup oil
1 tbsp. vanilla extract
1 medium-sized apple, finely chopped
½ cup water (alternative: flavored syrup of your choice)
½ cup pecans, chopped (optional)
Directions
Preheat an oven to 350 °F and then grease a muffin tin. Mix the flaxseed meal, artificial sweetener, baking powder, nutmeg, and cinnamon, in a bowl. Add the eggs, oil, apple chunks, pecans, vanilla extract, and water, to the dry mixture.
Combine the two and let the batter stand for 10-12 minutes. Pour this into the muffin tin and place it in the oven for 18 minutes until done, or when the muffins easily pull away from the sides of the tin.
