Easy Recipe

Ingredients
  • Lemon juice, 3½ tbsp.
  • Ground white pepper, 1 pinch
  • Water, 1 tbsp.
  • Worcestershire sauce, ⅛ tsp.
  • Butter, melted, 1 cup
  • Salt, ¼ tsp.
  • Eggs, 8
  • Canadian-style bacon, 8 strips
  • Egg yolks, 4
  • English muffins, split, 4
  • Butter, softened, 2 tbsp.
  • Distilled white vinegar, 1 tsp.
Procedure
You will require a double boiler to prepare the Hollandaise sauce. First put water in the lower part of the double boiler to fill it part way. See that the water filled in the lower part does not touch the top pan. Then, bring the water to a gentle simmer. In the top part of the double boiler add egg yolks, white pepper, Worcestershire sauce, lemon juice, and water. Whisk the mixture properly and then add melted butter to it.
See that you add one or two tablespoons of butter at a time and keep whisking the yolks simultaneously. Keep whisking the mixture until the butter gets combined completely. Add salt and remove the double boiler from the heat. Cover the double boiler.
Preheat the oven to broiler settings. Then, take a large saucepan and add water to cover 3 inches height. Boil the water to simmer gently and then add vinegar to it. Break the eggs one by one into the simmering water. Cook them for 2 to 3 minutes.
Then remove the poached eggs with help of a spoon and place them in a plate. In a medium-sized skillet, cook the bacon to turn brown. Toast the English muffins on a baking sheet. Apply softened butter to toasted muffins and place bacon slice on each side. Then place a poached egg and drizzle the sauce over it. Your eggs Benedict are ready to serve and eat.
