Enticing Egg Yolk Recipes

Baking certain dishes like pavlova or meringues can leave you with a lot of egg yolks. At times like these it is beneficial to us if we know a few recipes that use egg yolks.
There are certain recipes, which demand only egg whites. At such times, we are left with a number of egg yolks and if you don't want to waste it and simply throw it away. Do not worry, whatever be the reason, you can make use of the egg yolks and come up with some nice dishes.

Cakes Using Egg Yolks

Recipe 1

Ingredients
  • All-purpose flour, 1⅔ cups
  • Baking powder, 1½ tsp.
  • Salt, ½ tsp.
  • Egg yolks, ¾ cup
  • Egg, 1
  • White sugar, 1½ cups
  • Orange zest, 1 tbsp
  • Strained orange juice, 1 tbsp.
  • Lemon extract, ½ tsp.
  • Boiling water, ¾ cup

Method
  • While you do the other preparations, preheat the oven to 325°F.
  • Sift flour, baking powder and salt together twice.
  • In a large mixing bowl, beat egg yolks and whole egg until thick and lemon colored.
  • Gradually add sugar and continue to whisk the eggs.
  • Now, fold in orange rind, orange juice, and lemon extract into the egg mixture.

  • Then, add the dry mixture into the egg mixture and fold in, but do not stir or beat.
  • Now is the time to add boiling water and fold it, only till the liquid is blended.
  • Pour the cake batter into a greased pan.
  • Bake the cake at 325°F for approximately for an hour.
  • When the cake is ready, turn it over in a pan on a wire rack and let it cool for an hour.
  • Remove the cake from the pan and dust with confectioner's sugar or frost it with orange butter frosting and serve.

Recipe 2

Ingredients
  • Egg yolks, 12
  • Sugar, 2 cups
  • Boiling water, 1 cup
  • Salt, ½ tsp.
  • Baking powder, 4 tsp.
  • Lemon extract, 2 tsp.
  • Sifted flour, 3 cups
Method
  • Beat the egg yolks until they are light and fluffy.
  • Gradually add sugar to the egg yolks and continue to beat.
  • When you are adding sugar, also add hot water in a thin stream.
  • Now add the lemon extract.
  • Add sifted flour, baking powder, and salt to the eggs mixture and beat thoroughly.
  • Pour the batter into a cake pan and bake the cake in a preheated oven at 300°F for about an hour.
  • Remove the cake from the oven, when the toothpick inserted at the center of the cake comes out clean.
  • Let it cool, before you serve it.

Cookies Using Egg Yolk

Recipe 1

Ingredients
  • Butter, 1 cup
  • Sugar, 1½ cups
  • Egg yolks, 6
  • All-purpose flour, 2½ cups
  • Baking soda, 1 tsp.
  • Cream of Tartar, 1 tsp.
  • Vanilla extract, 1 tsp.
  • Lemon extract, ½ tsp.
  • Orange extract, ½ tsp.
Method
  • Beat the butter and sugar together, till they are fluffy.
  • In a separate bowl beat egg yolks and extract till light and fluffy.
  • Now add egg yolk mixture to the butter mixture and blend well.
  • In another bowl, mix flour, baking soda, and cream of tartar together.
  • Add the dry ingredients to the wet ingredients and mix till they are well blended.
  • Using the batter, form balls in the size of walnuts.
  • Roll the balls in sugar and place them on a greased cookie sheet and flatten them a little.
  • Bake the cookies at 350°F for 10 to 11 minutes.
  • Remove from the oven and let them cool, before you savor them.

Recipe 2

Ingredients
  • Egg yolks, 12
  • Brown sugar, 1 cup
  • White sugar, 1 cup
  • Shortening, 1½ cup
  • Lemon and orange flavoring, 3 tsp.
  • Flour, 3½ cups
  • Salt, ½ tsp.
  • Baking powder, 2 tsp.
  • Baking soda, 1 tsp.
Method
  • Whip sugar and shortening together till fluffy.
  • Beat eggs in a separate bowl till they are light and fluffy.
  • Now add the eggs to the sugar mixture.
  • Then sift in all the dry ingredients together along with the flavoring and mix well.
  • Roll the batter into balls and then into sugar, before you flatten them out.
  • Place them on a greased cookie sheet and bake the cookies at 350°F for 9 to 10 minutes.
  • Let them cool, before you can savor them.
If you want to make the recipes mentioned here, using whole eggs, you will have to divide the quantity of egg yolks by half and that is the number of eggs you will require for the recipe.
